
ถอดสูตรสำเร็จ ‘มินิโบโลน่าพริกสด’ พลิกโจทย์ลดต้นทุนสู่บทพิสูจน์นวัตกรรมอาหารระดับอุตสาหกรรม
ต้นทุนวัตถุดิบเป็นปัจจัยสำคัญต่อขีดความสามารถในการแข่งขันของอุตสาหกรรมแปรรูปเนื้อสัตว์ โดยเฉพาะผลิตภัณฑ์ประเภทไส้กรอกที่ราคาวัตถุดิบมีความผันผวน การพัฒนาสูตรอาหารเพื่อบริหารต้นทุนจึงเป็นกลยุทธ์สำคัญ อย่างไรก็ตาม การลดต้นทุนไม่ใช่เพียงการลดสัดส่วนวัตถุดิบราคาสูง แต่คือการเพิ่มทางเลือกในการปรับเปลี่ยนสูตร โดยยังคงรักษามาตรฐานความอร่อย เนื้อสัมผัส และคุณภาพ
ศูนย์วิจัยและพัฒนาผลิตภัณฑ์ปศุสัตว์ปทุมธานีจึงต่อยอดจากสูตรโบโลน่าเนื้อสุกร 100% สู่การพัฒนา “ไส้กรอกมินิโบโลน่าพริกสด” สูตรผสมเนื้อสุกรและเนื้อไก่ เพื่อ ลดต้นทุนการผลิตและเพิ่มมูลค่าวัตถุดิบ พร้อมชูจุดเด่นด้วยพริกสดและขนาดพอดีคำ
การศึกษาพัฒนาสูตรจำนวน 4 สูตร ได้แก่ เนื้อสุกร 100%, สุกร 70% และไก่ 30%, สุกร 50% และไก่ 50% และสุกร 30% และไก่ 70% ผลการทดสอบทางประสาทสัมผัสกับผู้ทดสอบ 30 คน พบว่าสูตรสุกร 70% และไก่ 30% ได้รับคะแนนความชอบโดยรวมสูงที่สุด เมื่อนำไปทดสอบกับผู้บริโภค 100 คน พบการยอมรับ 100% และมีคะแนนความชอบโดยรวมเฉลี่ย 7.76 ± 0.99 โดย 84% ยืนยันว่าจะตัดสินใจซื้ออย่างแน่นอน
การปรับสัดส่วนวัตถุดิบยังสามารถลดต้นทุนผลิตภัณฑ์อิมัลชันได้ โดยไม่กระทบต่อคุณภาพและเนื้อสัมผัส ขณะเดียวกันยังสามารถต่อยอดสู่ผลิตภัณฑ์พร้อมรับประทาน รสชาติใหม่และอัตลักษณ์ไทย ผลิตภัณฑ์ใส่ใจสุขภาพ รวมถึงผลิตภัณฑ์เฉพาะกลุ่มและการควบคุมปริมาณ สะท้อนแนวคิดการเปลี่ยนจากการลดต้นทุนสู่การสร้างนวัตกรรมและเพิ่มมูลค่าในอุตสาหกรรมเนื้อสัตว์

Raw material costs are among the main factors influencing competitiveness in the meat processing industry, particularly in sausage production, where prices often fluctuate. Food formulation is therefore an important strategy for cost management. However, genuine cost reduction is not simply about reducing high-cost ingredients but about increasing formulation flexibility while maintaining palatability, texture, and quality.
The Pathum Thani Livestock Research and Development Center developed “mini bologna sausages with fresh chilies” containing a mix of pork and chicken, based on the original 100% pork bologna formulation. The objective was to reduce manufacturing costs and enhance raw material value while maintaining product quality, taste, and texture. The product also features fresh chilies and a bite-sized format.
Four formulations were developed: 100% pork; 70% pork and 30% chicken; 50% pork and 50% chicken; and 30% pork and 70% chicken. A 9-point hedonic sensory evaluation with 30 participants showed that the formulation containing 70% pork and 30% chicken received the highest overall acceptance score. A subsequent consumer acceptance test with 100 participants resulted in a 100% approval rate, with an average overall preference score of 7.76 ± 0.99. Moreover, 84% of consumers indicated that they would definitely purchase the product.
Adjusting meat proportions proved to be an effective approach to reducing production costs without adversely affecting quality or texture. The formulation can also be further developed into ready-to-eat products, Thai-inspired flavors, better-for-you products, and portion-controlled formats. This approach demonstrates how cost management can evolve into product innovation and value creation, opening new opportunities in the meat industry.
