แอล-อะราบิโนส สามารถยับยั้งเอนไซม์ที่ใช้ในการย่อยน้ำตาลซูโครส และลดการดูดซึมของน้ำตาลซูโครส ในขณะที่ร่างกายคนเราไม่สามารถดูดซึมแอล-อะราบิโนสได้ จึงทำให้ระดับน้ำตาลในเลือดลดลง อีกทั้งแอล-อะราบิโนสยังส่งผลให้ค่าดัชนีน้ำตาล (Glycemic Index) ลดต่ำลงได้อย่างมาก จึงทำหน้าที่เสมือนตัวบล็อกน้ำตาล
