“Clean Label Food” is presently very popular worldwide, not only in Europe,
America, andAustralia, but also toAsia region. Consumers need to consume
food without food additives and diet free fromE-number. Consumers believe
that foodwith “Clean Label” is safe, have high quality, and good for health as
itproduced fromnatural ingredients, freeofchemicalsandsyntheticsubstances.

by focusing on food products, which are free from additives,

Nowadays, “Fritters”anameapplied toawidevarietyof fried foodareverypopularamongconsumers.Thus,
many food enterprises have launchedmany strategies and create new products to serve variety demand
of consumers so that they can compete in themarket. The use of modified starches and food additives is
the key which enables foodmanufacturers to develop fritter foods that meet demand of consumers, such
as crispness, appearance and reduce oil-up-take. It also includes the use of food additives for curing and
marinating which help reduces moisture loss during heating, and make the meat tenderness and do not
