เพื่อเป็นข้อมูลในการเลือกซื้ออาหารสำหรับผู้บริโภคที่แพ้กลูเตน ประกอบกับสากลและประเทศต่างๆ ได้มีข้อกำหนดการแสดงฉลากอาหารไม่มีกลูเตนแล้ว ดังนั้น สำนักงานคณะกรรมการอาหารและยาจึงออกประกาศกระทรวงสาธารณสุข (ฉบับที่ 384) พ.ศ.2560 เรื่อง การแสดงฉลากอาหารไม่มีกลูเตน เพื่อกำหนดหลักเกณฑ์และเงื่อนไขการแสดงฉลากอาหารไม่มีกลูเตน โดยมีสาระสำคัญสรุปดังต่อไปนี้1. กำหนดชนิดและลักษณะอาหารที่จะกล่าวอ้างว่า “ไม่มีกลูเตน” 4 กลุ่ม

1.กำหนดชนิดและลักษณะอาหารที่จะกล่าวอ้างว่า “ไม่มีกลูเตน” 4 กลุ่ม

2.กำหนดนิยามของกลูเตน ธัญพืช และพืชหัว

3.การแสดงฉลากของอาหารไม่มีกลูเตน ต้องใช้ข้อความว่า “ไม่มีกลูเตน” หรือ “gluten free” เท่านั้น สำหรับกรณีที่เป็นผลิตภัณฑ์อาหารที่ผ่านกระบวนการกำจัดกลูเตน ต้องแสดงข้อความว่า “ผ่านกระบวนการกำจัดกลูเตน” กำกับข้อความ “ไม่มีกลูเตน” หรือ “being specially processed to remove gluten” กำกับข้อความ “gluten free” ไว้ด้วย

4.กำหนดวิธีการตรวจวิเคราะห์ทางวิชาการของกลูเตน ให้เป็นไปตามหลักเกณฑ์ เงื่อนไข และวิธีการในการตรวจวิเคราะห์กลูเตนในอาหาร

5.ประกาศกระทรวงสาธารณสุข (ฉบับที่ 384) พ.ศ.2560 เรื่อง การแสดงฉลากอาหารไม่มีกลูเตน มีผลใช้บังคับตั้งแต่วันที่ 5 เมษายน พ.ศ.2560

6.อาหารที่มีการแสดงฉลากอาหารไม่มีกลูเตนไม่ถูกต้องตามประกาศฉบับนี้ ถือว่าเป็นการแสดงฉลากไม่ถูกต้อง ฝ่าฝืนประกาศซึ่งออกตามมาตรา 6(10) ผู้ฝ่าฝืนมีโทษปรับไม่เกิน 30,000 บาท

 

With objective to provide decision-making information for consumers on gluten-free products, and due to the current situation in which label requirements for gluten-free foods have been internationally established in various countries, the Food and Drug Administration (Thai FDA) thus issued the Notification of the Ministry of Public Health (No.384) B.E.2560 (2017) Re: Labeling of Gluten-free Foods wherein label requirements and conditions for gluten-free foods are stipulated as follows:

1.Foods that claim to be “Gluten-free” are classified into 4 groups

2.Definition Declaration of these words; Gluten, Cereal and Underground stem plant

3.Labeling of gluten-free foods shall include texts of “Gluten free” only. For foods that have undergone gluten-removal process, the text of “Being specially processed to remove gluten” shall be displayed together with the text of “Gluten free”.

4.Gluten analysis methods are established in compliance with rules and conditions of gluten assay in food

5.The Notification of the Ministry of Public Health (No.384) B.E.2560 (2017) Re: Labeling of Gluten-free Foods shall come into force from the 5^th of April B.E.2560 (2017).

6.Food not displaying Gluten-free label in accordance with the stipulated regulations in this notification shall be deemed incompliant with the notification issued under Clause 6(10). Violators are subject to fine of not more than THB 30,000.

“ปัจจุบันความต้องการของตลาดโลกเปลี่ยนเปลงไป โดยผู้บริโภคให้ความสำคัญกับคุณภาพของอาหาร การตรวจสอบย้อนกลับ ความแข็งแรงและความสวยงามของบรรจุภัณฑ์ ราคาสมเหตุสมผล ความสะดวกในการส่งมอบสินค้า และภาพลักษณ์ของแบรนด์สินค้า ดังนั้น ผู้ประกอบการไทยก็ควรปรับตัวและเลือกใช้นวัตกรรมให้เหมาะสม เช่น ระบบอีคอมเมิร์ซมีการเติบโตมากขึ้น ผู้ประกอบการรายใหม่ที่เน้นตลาดช่องทางนี้ควรมีเว็บไซต์ที่เข้าถึงข้อมูลได้ง่าย ชัดเจน และในอนาคตอาจจำเป็นต้องพัฒนาสร้างระบบการชำระเงินผ่าน QR code ด้วยเพื่อความสะดวกในการส่งมอบสินค้าและการจัดเก็บข้อมูลที่เป็นระบบมากขึ้น ทั้งนี้ ผู้ประกอบการไทยหลายรายได้ก้าวเข้าสู่ตลาดโลกแล้ว โดยเป้าหมายต่อไปที่เราสนับสนุนก็คือการกระจายรายได้สู่ภาคเกษตรกร เนื่องจากอาหารไทยได้รับความนิยมมากสำหรับนักท่องเที่ยว ดังนั้น การส่งเสริมเรื่องของอาหารไทย ส่วนผสมและวัตถุดิบต่างๆ ของไทยให้มีคุณภาพ ไม่ใช้สารเคมี และสิ่งสำคัญคือแรงงานผิดกฎหมายที่เราต้องผลักดันให้ถูกต้องและเป็นไปตามมาตรฐานการค้าที่ทั่วโลกยอมรับ” คุณกลินท์ กล่าวสรุป

 

 

Mr.Kalin Sarasin, Chairman of Thai Chamber of Commerce and Board of Trade of Thailand gave an interviewing about the role of the Thai Chamber of Commerce in promoting Thai entrepreneurs to penetrate the international market that “To develop potential food entrepreneurs, the important thing is to broaden new revenue models or innovative technology solutions in moving towards a sufficiency-driven economy across a broader range of industry sectors. We can observe from THAIFEX 2018 which the Thai Chamber of Commerce and alliances have encouraged and supported Thai entrepreneurs to attend the event in order to learn about market trend, consumer trend, as well as innovation from overseas so that they can create value and develop their own business in the next step.”

 

“Dealing with dramatical changing demands of the world, Thai entrepreneurs should improve their business with appropriate innovations. Nowadays, consumers become concerning on food quality, traceability, strength, creative packaging, reasonable prices, ease of delivery, image of the brand as well as the e-commerce system, which is growing significantly. Therefore, SME and startup, which focus on the e-commerce market, should have easy-to-access websites, and clear message for communication to customers. In the future, they may need to develop a QR code payment system to facilitate the logistics system and systemize information storage. However, many Thai entrepreneurs have already entered to the world market, so the next target is to generate income back to farming sector. Since Thai food is very popular among tourists, the promotion of Thai food and quality ingredients as well as non-chemical farming and the Labour’s welfare policy will push the right economic direction to the international trading standards,” Mr.Kalin concluded.

 ไส้กรอกเป็นผลิตภัณฑ์แปรรูปเนื้อสัตว์ โดยการนำเนื้อสัตว์มานวดบดผสมกับเกลือ ไขมัน และเครื่องปรุงอื่นๆ บรรจุในไส้ของสัตว์หรือไส้เทียม เช่น ไส้คอลลาเจน ไส้พลาสติก ผลิตภัณฑ์ไส้กรอก หมายรวมถึง ผลิตภัณฑ์เนื้อสัตว์ต่างๆ ที่ผ่านกระบวนการแปรรูปในลักษณะดังกล่าวข้างต้น เช่น ไส้กรอกปลา กุนเชียง ทั้งนี้ องค์ประกอบหลักของผลิตภัณฑ์ไส้กรอก คือ โปรตีน และไขมัน ผลิตภัณฑ์ไส้กรอกเป็นอาหารที่สะดวกซื้อ อีกทั้งมีรสชาติที่หลากหลายอร่อยถูกใจผู้บริโภค แต่โดยทั่วไปมักพบปัญหาที่มีอายุการเก็บรักษาที่ไม่ยาวนาน เนื่องจากการเสื่อมเสียจากเชื้อจุลินทรีย์ และในด้านคุณภาพจากการเกิดกลิ่นหืนของส่วนประกอบที่เป็นไขมัน นอกจากนี้ยังอาจเกิดการเปลี่ยนแปลงด้านเนื้อสัมผัสและสีของผลิตภัณฑ์ได้ ดังนั้น จึงมีงานวิจัยหาแนวทางการใช้ประโยชน์โปรตีนไฮโดรไลเซท เพื่อการปรับปรุงคุณภาพผลิตภัณฑ์ไส้กรอก

 

โปรตีนไฮโดรไลเซท คือ ผลิตภัณฑ์โปรตีนที่ถูกย่อยด้วยเอนไซม์โปรตีเอส ได้เป็นสารเปปไทด์ที่มีขนาดเล็กลงและกรดอะมิโนอิสระ สามารถใช้แหล่งโปรตีนทั้งจากพืชหรือโปรตีนจากสัตว์ เพื่อย่อยด้วยกระบวนการไฮโดรไลซิสและเอนไซม์ที่เหมาะสมให้กลายไปเป็นโปรตีนไฮโดรไลเซทประเภทต่างๆ ได้หลากหลายชนิด นอกจากนี้ โปรตีนไฮโดรไลเซทยังเป็นส่วนผสมอาหารเชิงหน้าที่ในระดับอุตสาหกรรม เช่น ในผลิตภัณฑ์ไส้กรอก เครื่องดื่มเสริมโปรตีน สำหรับการใช้โปรตีนไฮโดรไลเซทในผลิตภัณฑ์ไส้กรอกจะมีผลช่วยในการปรับปรุงคุณภาพ และคุณลักษณะด้านต่างๆ ของผลิตภัณฑ์ไส้กรอก ดังนี้

1. เพิ่มความคงตัวด้านเนื้อสัมผัสของผลิตภัณฑ์ไส้กรอก
2. ชะลอการหืนและรักษาปริมาณกรดไขมันไม่อิ่มตัวที่มีประโยชน์ในผลิตภัณฑ์
3. เพิ่มกลิ่นรสและปรับปรุงเนื้อสัมผัส
4. ช่วยลดการเปลี่ยนแปลงของสีของไส้กรอก

อย่างไรก็ตาม การเติมโปรตีนไฮโดรไลเซทควรมีการปรับสูตรศึกษาหาปริมาณการใช้ที่เหมาะสมโดยเฉพาะในเรื่องรสชาติ เนื่องจากโปรตีนไฮโดรไลเซทบางประเภทจะให้รสขมกับผลิตภัณฑ์ได้

 

Sausage is one kind of comminuted meat products made by grinding meat, mixing with salt, fat, other seasoning ingredients and followed by stuffing into either a natural casing from animal intestines or synthetic casing such as collagen or plastic. Sausage can be made from various meats for example fish sausage, Chinese sausage, in which protein and lipid are the main components. Sausage is a convenience food and can have variety of tastes for various consumers. Generally, sausage has a short shelf-life due to microbial spoilage and off-flavor quality due to a rancidity of lipid components. Furthermore, there may be changes in texture and color of the products. Therefore, some researches have reported the use of protein hydrolysate to improve the quality of sausage products.

 

Protein hydrolysate is a product of protein hydrolyzed by the enzyme called protease which splitting protein into smaller peptides and free amino acids. Protein from both plant sources and animal sources can be used as a protein source to produce the protein hydrolysate. The protein hydrolysate can be used as a functional food ingredient in food industrial products. Since the protein hydrolysate provides a greater solubility than native proteins, contributes to a specific flavor, has an antioxidant activity, and improves food stability, the use of protein hydrolysate in sausage products then help to improve the quality and characteristics as follows;

1. Stabilizing the texture of sausage products
2. Slow down rancidity and maintain health benefit unsaturated fatty acids in products
3. Enhancing flavor and improving texture
4. Reducing color changes of the sausage

The addition of protein hydrolysate should be adjusted to the appropriate sausage recipe to suit the specific requirement, especially in flavor because some protein hydrolysates can give a bitter taste to the product.

คนยุคมิลเลนเนียลกับโรคซึมเศร้า

ความเจริญทางเทคโนโลยีที่ก้าวกระโดด และการแข่งขันที่ดุเดือดในสังคมทุกวันนี้ เป็นปัจจัยหนึ่งที่คนรุ่นมิลเลนเนียลหรือคนวัยทำงานหลักในปัจจุบันต้องเผชิญกับสภาวะความเครียดและกดดันมากขึ้น การที่อยู่ในสภาวะดังกล่าวเป็นเวลานานและไม่มีวิธีการจัดการกับความเครียด จะทำให้คนกลุ่มนี้มีความเสี่ยงต่อการเป็นโรคซึมเศร้าได้ การศึกษาทางสถิติขององค์การอนามัยโลก (WHO) ระบุว่า ภาวะซึมเศร้าเป็นสาเหตุอันดับหนึ่งของโลกที่ทำให้คนสูญเสียสุขภาวะ โดยพบว่ามีผู้ป่วยโรคซึมเศร้ามากกว่า 300 ล้านคนทั่วโลก¹ สำหรับประเทศไทย มีผู้ที่ถูกวินิจฉัยว่าเป็นโรคซึมเศร้ากว่า 1.5 ล้านคน และมีผู้อยู่ในภาวะเสี่ยงอีกจำนวนมาก²

สาเหตุหนึ่งของโรคซึมเศร้า คือความผิดปกติของสารเคมีในสมอง  ซึ่งสมองเป็นอวัยวะสำคัญต่อการทำงานของระบบประสาท ทำหน้าที่ควบคุมและสั่งการระบบต่างๆ ในร่างกาย เมื่ออายุมากขึ้น ประสิทธิภาพของสมองจะลดลงและอาจเกิดความผิดปกติ ส่งผลให้เกิดอาการต่างๆ  เช่น ซึมเศร้า วิตกกังวล และโรคอัลไซเมอร์  นอกจากความเครียดและความเสื่อมของเซลล์สมองแล้ว อาการเหล่านี้สามารถเกิดขึ้นได้จาก ลักษณะทางพันธุกรรม และภาวะขาดสารอาหารได้อีกด้วย

 

Millennials and depression

The rapid growth of technology and keen competitions nowadays are main factors that put a lot of pressures and stress on the people in the millennial generation. For those who have been in the stressful situation for a long time and cannot handle their stress well, their risks of becoming depressed are higher. According to the World Health Organization (WHO), depression is the leading cause of disability worldwide with over 300 million sufferers¹. In Thailand, there are more than 1.5 million people diagnosed with depression and many people are at risks².

Brain chemical imbalance is one of the brain malfunctions that can lead to depression. The brain is a vital organ that controls all systems of the body, especially being the center of the nervous system. The efficiency of the brain decreases as we age which is linked to several neurological disorders including depression, anxiety, dementia and Alzheimer’s disease. Other factors that contribute to these neurological symptoms include genetic factors and malnutrition.

เนื่องจากความจำเพาะเจาะจงสูงของแอนติบอดี้ที่จะจับกับโปรตีนซึ่งเป็นสารก่อภูมิแพ้เพียงชนิดเดียวเท่านั้น รวมถึงข้อจำกัดของเทคโนโลยีนี้ ชุดทดสอบแยกประเภทสารก่อภูมิแพ้จึงมีการนำมาใช้สำหรับตรวจสอบสารก่อภูมิแพ้แต่ละชนิด นอกจากนี้ ระดับความจำเพาะเจาะจงที่สูงของสารก่อภูมิแพ้ยังอาจนำไปสู่การอ่านผลการวิเคราะห์ที่เป็นลบเทียมได้ ในกระบวนการผลิตอาหาร เช่น การใช้ความร้อน การเติมสารประกอบประเภทกรดหรือการหมักสามารถทำให้โครงสร้างโปรตีนที่เป็นสารก่อภูมิแพ้เกิดการเปลี่ยนแปลงได้ โดยสารก่อภูมิแพ้ที่เปลี่ยนรูปไปนี้อาจสูญเสียคุณสมบัติทางภูมิคุ้มกัน และแอนติบอดี้ที่จำเพาะเจาะจงก็จะไม่สามารถเข้าจับกับโปรตีนที่เป็นสารก่อภูมิแพ้ได้ต่อไป และนำไปสู่การอ่านผลการวิเคราะห์เป็นลบที่ไม่เป็นลบจริง หรือเพียงแค่มีปริมาณลดลง

 

เทคโนโลยีที่ใหม่กว่าสำหรับการตรวจวัดและหาปริมาณสารก่อภูมิแพ้ คือ เทคนิค Mass Spectrometry โดยเป็นเทคโนโลยีการวิเคราะห์ชั้นสูงที่สามารถระบุแยกชนิดโปรตีนและเปปไทด์ด้วยความแม่นยำสูง ข้อได้เปรียบของเทคนิคนี้คือแม้ว่าโปรตีนจะมีการเสียสภาพหรือเปลี่ยนรูปร่างไปเนื่องจากสภาวะที่รุนแรงในการผลิต แต่ความน่าจะเป็นของการค้นหาอย่างน้อยหนึ่งชิ้นส่วนที่สมบูรณ์มีความเป็นไปได้ค่อนข้างสูง

 

 

Due to the high specificity of antibodies towards only one particular allergenic protein and technology-related limitations, a separate kit has to be used for each allergen. Furthermore, the high degree of specificity to one allergen might lead to false negative results. Food processing steps like heat treatment, the addition of acidic compounds or fermentation can modify the target protein structure. These modified allergens can lose their immunological properties and the antibody – target protein complex cannot be formed anymore. This leads to false negative results or reduced quantifications.

 

An even newer technology for detecting and quantifying allergens is mass spectrometry, a high-tech method that identifies proteins and peptides with a very high level of accuracy. The advantage of this approach is that even if proteins are partially degraded or modified due to harsh food processing conditions, the probability of finding at least one intact fragment is quite high.

ในบทความนี้จึงขอให้ข้อมูลด้านโภชนาการของอาหารที่มีหลักฐานการยืนยันทางวิทยาศาสตร์ว่าช่วยป้องกันการเสื่อมของเซลล์ประสาท และช่วยให้สมองทำหน้าที่ในการจดจำได้ดีขึ้นได้

 

1.ปลา

หลักฐานสำคัญของสารอาหารที่ป้องกันต่อสภาวะการทํางานที่ลดลงของระบบประสาทและความจำ ได้แก่ กรดไขมันโอเมก้า 3 จากปลาทะเลน้ำลึก กรดไขมันอีพีเอ (Eicosapentaenoic Acid: EPA) และกรดไขมันดีเอชเอ (Docosahexaenoic Acid: DHA) เพียงแค่รับประทานปลาที่มีกรดไขมันจำเป็นสูงหนึ่งครั้งต่อสัปดาห์จะลดความเสี่ยงต่อการเกิดภาวะโรคอัลไซเมอร์และสมองเสื่อม กรดไขมันดีเอชเอนั้นเป็นกรดไขมันที่สำคัญและจำเป็นต่อการสร้างเนื้อเยื่อสมอง โดยพบมากในปลาที่มีกรดไขมันจำเป็นสูง เช่น แซลมอน แมคคาเรล ซาร์ดีน เฮร์ริง และแอนโชวี่

This article will give you a rundown of the nutrients and foods with the strongest evidence for neuroprotection, and for improving cognitive function.

1. Fish

The strongest evidence for any nutrients protecting against cognitive decline lies with the marine omega-3 fatty acids, EPA & DHA; as little as 1 oily fish meal per week is associated with less incidence of AD and dementia. The primary benefit appears to derive from the fatty acid DHA, the main fatty acid in brain tissue that is found highly concentrated in oily fish like salmon, mackerel, sardines, herrings and anchovies.

2. Dark Green Leafy Vegetables

Several nutrients vital for cognitive health are provided by this broad food group, which encompasses foods like spinach, kale, Swiss chard, lettuce, rocket, cabbage, broccoli etc. In particular, vitamin E and vitamin B9.

 

An interesting feature of vitamin E research worth paying attention to is supplementation in controlled trials has failed to improve cognitive function. Vitamin E thus appears to be a nutrient where dietary intake comes first.

 

Vitamin B9 is another nutrient abundant in dark green leafy vegetables, and the B-vitamin family has been implicated in neurological disease, due to their multiplicity of roles in neurological processes.

In one year time, we will be able to drive through Mae Sot all the way to India in just half a day, on the brand new India-Myanmar-Thailand Trilateral Highway. Apart from being the newest road-trip destination, this new highway is the new channel through which Thai goods can access Indian and Chinese markets where almost half the world’s populations reside. This benefits Thailand in stepping up as the center of the region’s and global economic and trade, making Thailand a true portal into enormous markets: India (1.3 billion people), China (1.4 billion) and ASEAN (600 million), as well as drawing more investment into the country. So, it came as no surprise that Thailand’s Eastern Economic Corridor (EEC) has attracted much attention from investors from Japan, China, Hong Kong, Russia and Singapore. The direction of development coincided with the study of the Asian Development Bank (ADB) that indicated the moving dynamic of global economy towards Asia with China and India as the main driving gears.

 

Many of the world’ s superpowers are, as the global trend now, taking parts in developing new economic corridors with less developed countries, such as Japan (in Thailand and India), China (in Pakistan, Myanmar, Lao PDR and Sri Lanka), and South Korea (in Vietnam). We should get ready and have relevant policies prepared to join in developing this Trilateral project that can potentially lead to similar initiative to the EEC, that will enhance opportunity in exporting/investing for Thai traders in the long run.

มีรายงานเกี่ยวกับประสิทธิภาพของฟองอากาศระดับอนุภาค หรือไฟน์บับเบิล ในหลายวัตถุประสงค์ พบการใช้ไฟน์บับเบิลในการล้างไปจนถึงการทำความสะอาด² นิยามของไฟน์บับเบิล คือ ฟองอากาศที่เส้นผ่านศูนย์กลางน้อยกว่า 100 µm โดยที่ไมโครบับเบิลมีเส้นผ่านศูนย์กลางอยู่ที่ 100 µm ถึง 1 µm และนาโนบับเบิลมีเส้นผ่านศูนย์กลางตั้งแต่ 1 µm จนถึงระดับนาโน (100 – 200 nm)

There are many researches about the effectiveness of fine-bubbles. And the fine-bubbles have been practically used for several objectives including washing and cleaning². Fine-bubbles are defined diameter to be less than 100 µm, and of which, diameter of bubbles from 100 µm to 1 µm is called as microbubble, and diameter of bubbles from 1 µm to nanosize (100 – 200 nm) is called nanobubble.

 

Normally, bubbles in water receive hydraulic pressures perpendicularly from all directions as Figure 1. And buoyance is cause by difference between the sum of upward and downward pressures to the bubbles. According to Archimedes’ principle, in the water, matter receives buoyance equivalent to mass of water that matter submerge. Normal size bubbles receive high buoyance so bubbles will rise to the surface in short time and have no time for shrinking by effect of surface tension.

 

Thus, the fine-bubbles, which diameter is smaller than normal-bubbles, are received lower buoyance, bubbles will slowly rise to the surface. The fine-bubbles will stay longer in the water and receive surface tension at interface between gaseous body and liquid that make bubbles shrinked and cause self-pressurization.

 

Smaller bubbles have higher inside pressure than the bigger bubbles. So, they are able to remove dirty including pesticide residue. Therefore, the fine-bubble technology can reduce not only dirty but also the risk of pesticide consumption for better human being.
