งานแสดงสินค้าสำหรับวงการนูทราซูติคัล Vitafoods Asia กลับมาอีกครั้งในปีนี้ เปิดประสบการณ์ใหม่กับ Probiotic Resource Centre ซึ่งเป็นโซนที่ให้ข้อมูลด้านโพรไบโอติกโดยเฉพาะ

ปัจจุบันอุตสาหกรรมของประเทศมีการเติบโตอย่างรวดเร็ว หนึ่งในอุตสาหกรรมที่นำรายได้เข้าสู่ประเทศ คือ อุตสาหกรรมอาหาร เช่น อุตสาหกรรมอาหารทะเลแช่แข็ง อาหารสำเร็จรูปแช่แข็ง และอื่นๆ ซึ่งในกระบวนการผลิตเหล่านี้ย่อมต้องอาศัยการทำความเย็น โดยหนึ่งในกระบวนการผลิตที่มีความสำคัญ คือ การแช่แข็ง (Freezing) เมื่อสินค้าผ่านกระบวนการแช่แข็งมาแล้วจะถูกเก็บรักษาไว้ในห้องเย็น (Cold storage) ที่อุณหภูมิ -20 oC ถึง -25 oC เพื่อรอการจัดส่งและจำหน่ายต่อไป

การแช่แข็งคือการทำให้สินค้าเย็นแข็งตัวอย่างรวดเร็ว ซึ่งจำเป็นต้องใช้เครื่องจักรที่เรียกว่า ฟรีซเซอร์ (Freezer) โดยฟรีซเซอร์ที่นิยมใช้งานมีด้วยกันสองชนิดใหญ่ๆ ในอุตสาหกรรม คือ Plate freezer หรือ Contact freezer และ Air blast freezer

Air blast freezer คือเครื่องจักรที่ผลิตขึ้นมาเพื่อตอบสนองความต้องการของลูกค้าแต่ละราย ข้อสำคัญคือผู้ซื้อหรือผู้ใช้ควรมีความรู้ความเข้าใจพื้นฐานเกี่ยวกับการทำงานและข้อกำหนดของฟรีซเซอร์เพื่อที่จะทำให้สามารถใช้งานได้อย่างตรงตามความต้องการ โดย Air blast freezer มีความคล่องตัวในการใช้งาน สามารถฟรีซสินค้าที่มีลักษณะ ชนิด และขนาดที่แตกต่างกันได้ จึงมักเป็นที่นิยมกันอย่างแพร่หลาย

Air blast freezer สามารถจำแนกได้เป็น 2 ชนิดใหญ่ๆ ด้วยกัน คือ
1. แบบต่อเนื่อง (Continuous freezer): สินค้าจะเคลื่อนที่ผ่านเข้าไปในฟรีซเซอร์อย่างต่อเนื่อง
2. แบบเป็นช่วงๆ (Batch freezer): สินค้าจะถูกนำเข้าสู่ฟรีซเซอร์และฟรีซจนเสร็จสิ้นก่อนจะนำออกมาและหลังจากนั้นจะนำสินค้าชุดใหม่เข้าสู่ฟรีซเซอร์เพื่อฟรีซครั้งต่อไป

Currently, the country’s industries are growing rapidly. One of the industries that create revenue to the country is the food industry, whether it is frozen seafood, frozen RTE food, and others. Part of the production process is required cooling step, which one of the most important processes is a freezing. Once a product has been frozen, it will be kept on a cold storage at – -20 ^oC to -25 ^oC before further delivered or distributed.

Freezing is a process to frozen goods within a short period, which the process is needed a machine so called “Freezer”.  Plate freezer or contact freezer and air blast freezer are two types of freezers that are the most popular in the frozen food industry.

          Air blast freezer is a machine, which has been manufactured to meet the demand of each customer. An important thing is buyers or users should have a basic understanding of the functionality and requirements of a freezer in order to be able to use the machine to serve their demands. It is flexible to use, can freeze goods with different texture, types, and sizes, and thus, it is widely used among the frozen food industry.

          The Air Blast Freezer can be divided into two main types as follows

1. Continuous freezer: goods will move through freezer continuously.
2. Batch freezer: goods will be placed in a freezer and be frozen before bringing out and after that new goods will be moved to a freezer for freezing.

Currently, an accident and unsafe trend in a factory and warehouse area have been increased due to the negligence of human or even a tool that is not conducive to work. One of main reasons is the lack of serious support on security procedure from the organization, in terms of educating their human resources, budget, and time. As a result, the security measure cannot be carried out continuously and effectively. This is a crucial agenda for the management and the owner, who will play a significant role to draw a policy in order to promote safety management in factory and warehouse areas to meet the safety standards.

Key to create safety in factory and warehouse areas could be divided in accordance to the form of operations are Passive or Prevention Measure and Active or Protection Measure.

ในปี 2560 ที่ผ่านมา ตลาดผลิตภัณฑ์ผักและผลไม้แปรรูปในประเทศไทยมีมูลค่าอยู่ที่ประมาณ 2,100 ล้านบาท เติบโตขึ้นร้อยละ 2.7 จากปีก่อนหน้า ปัจจัยที่สนับสนุนการเติบโตนี้มาจากการที่กลุ่มคนทุกเพศทุกวัยหันมาใส่ใจกับสุขภาพของตนเองและศึกษาหาความรู้เกี่ยวกับโภชนาการอาหารมากขึ้น เพราะต้องการหลีกหนีจากโรคภัยไข้เจ็บที่เกิดจากการรับประทานอาหารที่ไม่ดีต่อสุขภาพ ผักและผลไม้เป็นจึงตัวเลือกที่ขาดไม่ได้สำหรับกลุ่มคนรักสุขภาพที่ต้องการบริโภคอาหารเพื่อประโยชน์ต่อร่างกาย ส่งผลให้ผักและผลไม้แปรรูปเกาะกระแสความต้องการนี้ไปด้วย ประกอบกับสังคมในยุคปัจจุบันที่ผู้บริโภคไม่มีเวลาในการประกอบอาหารหรือเลือกซื้อผักและผลไม้สดมารับประทานก็เป็นอีกปัจจัยหนึ่งที่ช่วยให้ผู้บริโภคเลือกซื้อผักผลไม้แปรรูปแทน

ผลิตภัณฑ์ผักและผลไม้แปรรูปสามารถแบ่งออกเป็น 2 กลุ่มใหญ่ คือ
1. กลุ่มผักและผลไม้แปรรูปที่เก็บในอุณภูมิห้อง (Shelf Stable Fruit and Vegetables) คือผักหรือผลไม้ที่ผ่านการฆ่าเชื้อและสามารถเก็บรักษาได้ที่อุณหภูมิห้องเป็นเวลานาน มีมูลค่าอยู่ที่ 1,533 ล้าน
2. กลุ่มผักและผลไม้แปรรูปแช่แข็ง (Frozen Processed Fruit and Vegetables) มีมูลค่าอยู่ที่ 567 ล้าน

In 2018, market for processed fruit and vegetables in Thailand value around 2.1 billion baht, expanded 2.7% from the previous year, due to the interest in health and nutrition from people of every gender and generation to avoid illness from unhealthy food. Fruit and vegetables have become an important option for health-loving people who seek beneficial food, which drives the increasing demand. With hasty lifestyle these days, fresh fruit and vegetables may take time to prepare, which makes many people turn to processed fruit and vegetables.

However, growth for processed fruit and vegetables products in Thailand is not significant, as there are many healthy products available in the market such as organic food and drinks, free-from food, and fresh fruit and vegetables many are familiar with. Therefore, entrepreneurs must adjust by developing the products to make them notable for example; make the food easy to restore and edible for the whole year or focus on their health benefits to challenge with substitutional products.

Processed fruit and vegetables products can be divided into 2 types;
1. Shelf Stable Fruit and Vegetables – these products have been sterilised and can be stored at room temperature for a long time. The market value for this type of products is 1,533 million bath.
2. Frozen Processed Fruit and Vegetables – this type has the market value of about 567 million baht.

เครื่องติดฉลากเป็นเครื่องมือสำหรับติดฉลากและป้ายต่างๆ เพื่อติดลงบนบรรจุภัณฑ์ พื้นที่แสดงข้อมูลของสินค้า พื้นที่ ณ จุดขาย และพัสดุภัณฑ์ทุกประเภท

Labels are used on every kind of product to brand, decorate or provide information for the consumer. Many labels do all three functions and can contain, for example, pre-printed bar codes supplying, batch, stock and price information to the retailer and consumer.

Other machines provide print on demand and weigh/price labels, usually for fresh or perishable products where the weight of item varies from pack to pack or for transit purposes. Many of these labels are printed and applied in the store or warehouse.

Labels are also used to provide protection against tampering (tamper evident) to ensure the product reaches the consumer without interference and unopened.

A growing market is security labelling to counter fraud and theft, and give brand protection and authentication. These include RFID and smart labels, holographic labels, tamper evidence, counterfeit deterrence and source tagging. Other machines are used to apply Leaflet labels – multi-page labels that provide space for large amounts of consumer information e.g. in pharmaceutical applications.

อุตสาหกรรมอาหารในภาพรวมปี 2560 “ขยายตัว” ทั้งด้านการผลิต การจำหน่ายภายในประเทศการส่งออก และการนำเข้า โดยด้านการผลิต และการจำหน่ายภายในประเทศในช่วงเดือน ม.ค.-ก.ย. 2560 ขยายตัวที่ร้อยละ 3.71 และ 6.31 (%yoy) ตามลำดับ จากการเพิ่มขึ้นของความต้องการบริโภคภายในประเทศ โดยเฉพาะกลุ่มสินค้าปศุสัตว์แปรรูป ประมงแปรรูป และอาหารสัตว์ รวมถึงความต้องการบริโภคของประเทศคู่ค้าหลักที่เพิ่มขึ้นอย่างต่อเนื่อง สำหรับด้านการส่งออกขยายตัวที่ร้อยละ 10.34 (%yoy) จากการฟื้นตัวทางเศรษฐกิจของประเทศคู่ค้าหลัก ทำให้ประเทศคู่ค้าหลักมีความต้องการสินค้าอาหารของไทยเพิ่มมากขึ้นในทุกกลุ่มสินค้าอาหาร โดยเฉพาะปศุสัตว์แปรรูป และผักผลไม้แปรรูป อีกทั้งด้านการนำเข้า ขยายตัวที่ร้อยละ 6.62 (%yoy) มีสาเหตุสำคัญจากการเพิ่มขึ้นของระดับราคาปลาทูน่าสดแช่เย็นแช่แข็งที่ไทยต้องนำเข้าจากประเทศคู่ค้าเนื่องจากผลผลิตประมงภายในประเทศไม่เพียงพอต่อความต้องการ ทำให้มูลค่านำเข้าในภาพรวมเพิ่มขึ้นมากกว่าช่วงเดียวกันของปีก่อน

Overall food industry situation in 2017 was “expanded” in all sectors including manufacturing, domestic sale, export and import. The manufacturing sector and domestic sale during January to September 2017 was up by 3.71 percent and 6.31 percent (%yoy), respectively, due to rising consumption demand in domestic, especially for processed livestock products, processed fishery products, and feedmeal, as well as higher consumption demand by major trading partner countries. The export sector grew by 10.34 percent (%yoy), thanks to recovering economic growth of major trading partner countries resulting in higher demand for Thai food products in all food categories, in particular processed livestock and processed fruits and vegetables. The import sector also increased 6.62 percent (%yoy) due mainly to higher price of frozen and chilled fresh tuna, which Thailand needs to import from trading partners following inadequate supply in domestic causing higher import value in overall compared to the same period last year.
