การทดสอบความปลอดภัยอาหาร หมายถึงการตรวจสอบผลิตภัณฑ์อาหารเพื่อหาสิ่งมีชีวิตที่ก่อให้เกิดโรค สารเคมี และสิ่งต่างๆ ที่ก่อให้เกิดอันตราย โดยทั่วไปจะมีเป้าหมายของการตรวจหาสิ่งที่ปนเปื้อนในอาหารเบื้องต้น 3 แบบ คือ เชื้อจุลินทรีย์ก่อโรค สารเคมี และสิ่งมีชีวิตดัดแปรพันธุกรรม (GMOs)

According to a new report published by Allied Market Research, titled, Food Safety Testing Market by Contaminant, Food Tested, and Technology: Global Opportunity Analysis and Industry Forecast, 2018-2025, the global food safety testing market size was valued at $13,144 million in 2017, and is estimated to reach $23,204 million by 2025, registering a CAGR of 7.3% from 2018 to 2025. In 2017, the polymerase chain reaction (PCR) technology segment accounted nearly half of the total food safety testing market share.

Food safety testing refers to the inspection of food products for disease-causing organisms, chemicals, and other hazardous materials. It is generally targeted at three primary food contaminants namely, pathogens, chemicals, and genetically modified organisms (GMOs).

In 2017, the pathogen testing segment dominated the global food testing market, and it is likely to maintain its dominance over the forecast period.”

กระบวนการแปรรูปโดยใช้ความดันสูงเป็นเทคนิคการแปรรูปโดยไม่ใช้ความร้อน โดยเป็นการให้ความดันกับผลิตภัณฑ์ในช่วง 100-1,000 เมกะปาสกาล เพื่อยับยั้งการเจริญเติบโตของเชื้อจุลินทรีย์และยืดอายุการเก็บรักษาของผลิตภัณฑ์ โดยยังคงรักษาคุณค่าทางโภชนาการหรือวิตามินในผลิตภัณฑ์เอาไว้ได้ (Shouqin et al., 2004)

High-pressure processing
High-pressure processing is a non-thermal food processing technique. It consists in treating food products at an elevated pressure between 100 and 1,000 MPa to inactivate microorganisms and extend the shelf life of the products without any degradation of nutrients or vitamins (Shouqin et al., 2004).

Recently, this technique is used to extract bioactive compounds from plant materials. High pressure can cause deprotonation of charged groups and disruption of salt bridges and hydrophobic bonds resulting in structural changes in cells and permeabilization of the cell membranes. It can enhance the mass transfer rate and improve the diffusivity of metabolites into the solvent extraction (Torres and Velazquez, 2005).

High-pressure extraction was used for the extraction of polyphenols from longan fruit pericarp. Polyphenol yields increased from 16 to 21 mg/g DW when increasing the pressure from 200 to 500 MPa. However, the increase of the treatment duration from 2.5 to 30 min did not improve the yields of polyphenols at a same pressure of 500 MPa (Prasad et al., 2009a). The transfer of pressure to the whole material is uniform and instantaneous. The equilibrium of solvent concentration between the inside and outside of the cells is reached in a short time (Torres and Velazquez, 2005). This explains the extraction of the highest yield of polyphenols during the first 2 minutes of the high-pressure extraction.

โซเดียมเป็นภัยเงียบใกล้ตัว…เปรียบได้เหมือนการสะสมความตายแบบผ่อนส่ง นอกจากอาการป่วยที่จะสร้างความลำบากในการใช้ชีวิตแล้ว ยังเป็นภาระทางการเงินระยะยาวที่ต้องแบกรับ ซึ่งประเทศไทยมีสถิติผู้ป่วยที่ต้องล้างไตเพิ่มขึ้นทุกปี

คนไทยกินเกลือ (โซเดียม) สูงถึง 4,351 มิลลิกรัมต่อวัน หรือมากกว่า 2 เท่าของความต้องการของร่างกายปัจจุบัน คนไทยป่วยเป็นโรคไตวายเรื้อรังสูงถึง 7,600,000 คน เสียชีวิตด้วยภาวะหัวใจวายจากโรคหัวใจและหลอดเลือดปีละเกือบ 40,000 คน หรือวันละ 108 คน เป็นโรคอัมพฤกษ์อัมพาต มากกว่า 500,000 คน

ที่ผ่านมา ประเทศไทยมีมาตรการในการรณรงค์ให้คนไทยลดการบริโภคเค็ม อย่างเช่น การมีฉลากโภชนาการ บอกค่าพลังงาน น้ำตาล ไขมัน และโซเดียม แต่ก็ยังไม่ได้ผลเท่าที่ควร จึงขอเสนอนโยบายเก็บภาษีความเค็ม โดยเริ่มต้นจากสินค้าประเภทบะหมี่กึ่งสำเร็จรูป โจ๊ก ขนมกรุบกรอบ ทุกประเภท เป็นอันดับแรก เนื่องจากมีปริมาณโซเดียมสูงมาก

Sodium… a silent threat to your health that may not be noticeable, but killing you slowly. Associated with the illness that causes suffering, it is also a long-term financial burden of health care. In Thailand, the numbers of patients who need hemodialysis has been increasing every year.

Approximately, Thai people consume as high as 4,351 mg of sodium per day or more than 2 times the body needs. Today, estimated 7,600,000 of Thai people are suffering from chronic kidney disease. Nearly 40,000 people a year died of a heart attack from cardiovascular disease, or 108 people per day, and more than 500,000 people had developed symptoms of stroke.

Lately, Thailand has initiated measures coupled with a campaign for Thai people to reduce salt intake, such as nutrition labelling that stipulate nutrient levels displaying the information about energy, sugar, fat and sodium. However, these measures are not as effective as it should be. A salt tax was then introduced starting from food products that contain high sodium including instant noodles, instant porridge, and crunchy snacks.

Cannabis Packaging
First came medical marijuana, now the recreational march is on – and flexible packaging is poised to grow with this emerging market.

And while the cannabis market is expected to be one that is fast-changing as well as fast growing moving forward, there are certain issues that converters are going to have to address. One, there’s the pouch itself, which is regarded as one of the least secure packages. Two, there’s child-resistance. And on top of all of this, there are costs that will have to be kept in check.

แบคทีเรียชนิดก่อโรคทางอาหารและแบคทีเรียที่ทำให้อาหารเน่าเสีย ยังคงเป็นปัญหาสำคัญสำหรับทุก ๆ ประเทศ รวมทั้งประเทศไทย เนื่องจากการปนเปื้อนของแบคทีเรียดังกล่าวสู่อาหารสามารถเกิดขึ้นได้ในทุกขั้นตอนของการผลิตอาหาร ผู้ผลิตอาหารใช้วิธีการต่างๆ เพื่อกำจัดหรือลดปริมาณของแบคทีเรียดังกล่าว เช่น สารเคมี ความร้อน ความดันสูง และรังสี เป็นต้น อย่างไรก็ตาม วิธีการเหล่านี้ยังมีข้อจำกัดหลายประการ เช่น เงินลงทุนเริ่มต้นสูง ความเสียหายที่อาจขึ้นกับอุปกรณ์และเครื่องมือในการผลิต ผลกระทบต่อคุณภาพทางประสาทสัมผัสและโภชนาการของอาหาร รวมถึงการยอมรับของผู้บริโภคต่อผลิตภัณฑ์อาหาร เป็นต้น

ปัจจุบันมีผลิตภัณฑ์เฟจทางการค้าที่ได้รับการรับรองว่ามีความปลอดภัย และนำมาใช้เพื่อควบคุมคุณภาพและความปลอดภัยของอาหารได้ อาทิ ผลิตภัณฑ์เฟจที่สามารถใช้ทำลาย Xanthomonas campestris pv. vesicatoria และ Pseudomonas syringae pv. tomato บนมะเขือเทศและพริก เป็นต้น

Food spoilage and pathogenic bacteria are remained a major problem for every country, including Thailand. This is due to the contamination of bacteria to food can occur at any stages along the food production. Food manufacturers use various methods to eliminate or reduce the amount of bacteria such as chemicals, heat, high pressure, radiation and etc. However, these methods still have many limitations, such as high initial investment capital, damage that may occur with equipment and production tools, effects on sensory quality and nutrition of food, as well as consumer acceptance of food products.

The use of chemicals for disinfection (such as chlorine and ozone) may affect the color, smell, texture of the product, or create residues. The use of pasteurized heat or sterilization affect the color, smell, texture of the product, and nutritional value. Therefore, it may not be suitable for use with fresh meat, fresh vegetables and fresh fruits. Radiation may cause carcinogens, and most consumers still do not accept food that has been irradiated. In addition, this method may destroy beneficial microorganisms found in natural foods. Hence, biological control using virus of bacteria or Bacteriophage or called shortly as ‘Phage’ is one option that has gained high attention because it is a natural way or green technology which is applied to control bacteria in food or throughout the food chain production.

At present, there are the phages that are applied for various fields such as genetic engineering, medical, sick animals’ treatment, plant disease control, identification and detection of bacteria, wastewater treatment, and control of bacteria related to food quality and safety in every stage from “Farm to Fork”. In case of the applying in the food industry, phage is used for destroying bacteria on animals and fruits and vegetables during a primary production. It uses for disinfection on equipment and tool’s contact surfaces in food factories, and uses as natural antimicrobial agents in food/food products or through food packaging in order to extend shelf life. Many countries around the world, such as the United States, Canada, Switzerland, Australia, New Zealand, Israel and the European Union, have certified and allowed the use of phage product on food.

Currently, there are commercial phage products that are certified as safety product, and can be used to control the quality and safety of food. For instance, Phage product which can be used to destroy Xanthomonas campestris pv. vesicatoria และ Pseudomonas syringae pv on tomato and chilli.

Polyphenols are small, bioactive substances found in i.e. fruits and vegetables. The plants use them as protective agents against UV radiation and defense against viral and fungal attacks, and they have attractive colors and tastes that are important to attract animals and birds that eat the berries and spread the seeds.

Where are polyphenols found?
A large number of fruits contains many polyphenols, e.g. blueberries, strawberries, raspberries, citrus fruits, blue grapes, cherries, apples, dark plums, blackberries, redcurrants and blackcurrants. There are also varying amounts of polyphenols in vegetables, tea, coffee, dark chocolate, nuts and grain.

Selected berries and a unique content
Redcurrants and blackcurrants are specially concentrated sources of polyphenols with a more varied composition than many other berries. The researchers in a Danish company have discovered a totally unique polyphenol in redcurrants and blackcurrants, a novel bioactive berry compound.

After years of research they have selected special blackcurrant and redcurrant varieties with a particularly high content. A patented special concentrate product contains a special concentrate of these particular varieties of berries with a unique content of a novel bioactive berry compound and a very concentrated amount of polyphenols

ในหลายๆ กระบวนการผลิตอาหารและเครื่องดื่มมีความต้องการจัดเก็บผลิตภัณฑ์ไว้ในถังจัดเก็บก่อนประมาณ 2-3 ชั่วโมง หรือ 2-3 วัน หรืออาจจะเป็นสัปดาห์ โดยจุดประสงค์ของการจัดเก็บอาจเพื่อการเก็บพักไว้ชั่วคราวก่อนที่จะบรรจุ หรือจัดเก็บในระยะยาวเพื่อรอให้เกิดปฏิกิริยาบางอย่าง เช่น การหมัก ซึ่งจำเป็นต้องพักไว้ให้เกิดปฏิกิริยาขึ้นก่อนที่จะดำเนินการในขั้นตอนต่อไป

Many food and beverage manufacturing processes require a product to be stored in a holding tank for a few hours, days, or weeks. The purpose may be temporary storage before packaging, or longer-term storage where a reaction, such as fermenting, needs to occur before processing continues.

While storage is an important step in food and beverage manufacturing, it can be prone to spoilage unless plant managers take precautions. Without protection, air that harbors bacteria, dust, pollen, water, oil aerosols, and vapors can enter the tank and spoil or contaminate a product.

There are three commonplace methods for avoiding product spoilage and contamination in holding tanks: Tank blanketing; Sterile air box systems; and Sterile air tank venting.

The costs and advantages of these solutions vary widely, so it’s important to use them in appropriate circumstances. Let’s compare their relative benefits and costs.

ญี่ปุ่นเป็นประเทศคู่ค้าด้านอาหารอันดับ 1 ของไทย ขณะที่ไทยเป็นคู่ค้าด้านอาหารอันดับ 4 ของญี่ปุ่น โดยไทยส่งออกอาหารไปญี่ปุ่นสัดส่วนร้อยละ 13.3 ขณะที่ญี่ปุ่นนำเข้าจากไทยคิดเป็นสัดส่วนร้อยละ 6.4 โดยมีสัดส่วนค่อนข้างคงที่ตลอดระยะเวลา 3-4 ปีที่ผ่านมา

ทั้ง 2 ประเทศ มีมูลค่าการค้าอาหารรวมเป็น 145,000 ล้านบาท โดยในปี 2560 ไทยส่งออกอาหารไปญี่ปุ่นมูลค่า 135,300 ล้านบาท ขณะที่ญี่ปุ่นส่งออกอาหารมาไทย 9,800 ล้านบาท ส่งผลให้ไทยเกินดุลการค้าอาหารเมื่อเทียบกับญี่ปุ่นมูลค่า 125,500 ล้านบาท สำหรับในปี 2561 ไทยส่งออกสินค้าอาหารไปญี่ปุ่นไม่ต่ำกว่า 130,000 ล้านบาท อยู่ในระดับใกล้เคียงกับปี 2560 ส่วนปี 2562 มีแนวโน้มขยายตัวร้อยละ 8 มูลค่าส่งออกราว 140,000 ล้านบาท

ตามบันทึกข้อตกลงระหว่างบีโอไอและจังหวัดมิเอะ ก่อให้เกิดความร่วมมือทางเทคโนโลยีครั้งแรกในด้านการแปรรูปอาหาร โดยมีการจัดตั้งศูนย์นวัตกรรมจังหวัดมิเอะ-ประเทศไทย (Mie-Thailand Innovation Center) ณ สถาบันอาหาร ซึ่งเป็นความร่วมมือของกรมส่งเสริมอุตสาหกรรม สถาบันอาหาร และจังหวัดมิเอะ ประเทศญี่ปุ่น พร้อมมีการรับมอบเครื่องจักรแปรรูปอาหารมูลค่า 25 ล้านเยน จากบริษัท SUEHIRO EPM ประเทศญี่ปุ่น เพื่อต่อยอดการวิจัยและการทำต้นแบบนวัตกรรมผลิตภัณฑ์แปรรูปอาหารจากวัตถุดิบของไทยเพื่อเพิ่มมูลค่าเชิงพาณิชย์ โดยเฉพาะผลิตภัณฑ์จากข้าวและธัญพืช

When it comes to food trading, Japan is Thailand’s No.1 trading partner. On the other hand, Thailand is Japan’s 4th top trader. In the past 3-4 years, Thailand averagely exports 13.3% of its food to the Japan, which accounts for 6.4% of what’s imported by the island country.

The food trade between the 2 countries is worth THB 145 billion. In 2017, Thailand exported to Japan in value of THB 135.3 billion and imported THB 9.8 billion, making the country enjoys the trade profit of THB 125.5 billion. In 2018, it is speculated that Thailand has exported no less than THB 130 billion, relatively similar to 2017. However, it is predicted that in 2019, food exports from Thailand should expand around 8% to THB 140 billion.

The MOU signed between BOI and Mie Prefecture, which was the first technological cooperation in food processing, has resulted in the establishment of Mie-Thailand Innovation Center at Thailand’s National Food Institute (NFI). The project is a collaboration between the Department of Industrial Promotion (Ministry of Industry), the National Food Institute, and Mie Prefecture, Japan. Japan’s SUEHIRO EPM has also given a food processing machine worth 25 million yen to the NFI to support with researches and creations of prototypes of food, which are processing from Thailand’s local product, especially rice and grains, to create commercial value.
