In today’s global meat trade, “quality” and “safety” are no longer judged solely by Warisa Fanthamkrang
inspection results at the factory gate. Instead, the ultimate test for exporters is how Food Innovation and Packaging Center (FIN)
swiftly they can trace data during a crisis. International trading rules have evolved Chiang Mai University
well beyond the traditional One Step Back, One Step Forward principle, driven by
stricter global standards—from the U.S. FDA’s FSMA Rule 204 mandating granular
CTE/KDE tracking, to new audit benchmarks set by major European retailers and

The core of these new rules lies in the digital traceability 24 hours standard, which Faculty of Agro-Industry
mandates that sellers and exporters deliver lot-level traceability records along with Chiang Mai University
digital Certificates of Analysis (COA) in an electronic format within 24 hours of an
emergency or a random audit. This means the era of paper file folders and taking
days to compile Excel sheets across departments has officially come to an end. In
the eyes of global importers, delayed traceability is no longer treated as a simple
administrative oversight; it is categorized as a major non-conformity—a severe food Ravis Tasakorn

For Thai meat processors and exporters, transitioning to digital systems is no lon-
ger an optional strategy reserved for large enterprises, but a mandatory baseline
requirement. It is essential for containing damage through targeted recalls during
a crisis, and serves as a decisive test of transparency and preparedness to safe-
guard long-term trust in the global marketplace.
