สืบเนื่องจากในปี พ.ศ.2559 สำนักงานมาตรฐานสินค้าเกษตรและอาหารแห่งชาติ (มกอช.) ได้ดำเนินการปรับปรุงข้อมูลการบริโภคอาหารของคนไทยให้เป็นปัจจุบัน และสามารถสะท้อนสถานการณ์จริงของรูปแบบการบริโภคของคนไทยที่เปลี่ยนแปลงไป ประกอบกับคณะกรรมาธิการโคเด็กซ์ (Codex Alimentarius Commission; CAC) ในการประชุมครั้งที่ 40 ให้การรับรองข้อกำหนดเงื่อนไขการใช้วัตถุเจือปนอาหารเพิ่มเติมซึ่งเสนอโดยคณะกรรมการโคเด็กซ์ สาขาวัตถุเจือปนอาหาร (Codex Committee on Food Additives; CCFA) เพื่อกำหนดเป็นมาตรฐานทั่วไปสำหรับวัตถุเจือปนอาหารของโคเด็กซ์ (General Standard for Food Additives; GSFA 2017) ดังนั้น เพื่อให้ข้อกำหนดการใช้วัตถุเจือปนอาหารมีความเหมาะสมตามความจำเป็นทางด้านเทคโนโลยีการผลิตอาหารสอดคล้องสถานการณ์ปัจจุบันและแนวทางสากล ตลอดจนเพิ่มประสิทธิภาพในการคุ้มครองความปลอดภัยของผู้บริโภคให้มากยิ่งขึ้น กระทรวงสาธารณสุข โดยสำนักงานคณะกรรมการอาหารและยา จึงออกประกาศกระทรวงสาธารณสุข เลขที่ 389 พ.ศ.2561 เรื่อง วัตถุเจือปนอาหาร (ฉบับที่ 5)

 

In 2016, the National Bureau of Agricultural Commodity and Food Standards (ACFS) updated the data on food consumption of Thai nationals which consequently reflected the real situations of Thai consumers’ changing behaviors. Additionally, in the 40^th Session of the Codex Alimentarius Commission (CAC), additional conditions for food additive usage proposed by the Codex Committee on Food Additives (CCFA) were finally adopted in order to establish the General Standard for Food Additives (GSFA 2017). Therefore, to improve the effectiveness of consumer protection and to make the food additive usage requirements response better to the technological needs of food production, current situations, and international standards, the Ministry of Public Health, via the Food and Drug Administration, thusly prescribed the Notification of the Ministry of Public Health No.389 B.E.2561 (2018) Re: Food Additives (No.5).

นวัตกรรมกำลังเกิดขึ้นในทุกส่วนของอุตสาหกรรม และในอุตสาหกรรมเครื่องดื่มนั้น นวัตกรรมเข้ามามีบทบาทกับชีวิตของผู้คนมากกว่าที่เราคาดไม่ถึง การพยากรณ์ไปข้างหน้าเป็นการยากที่จะทราบว่ามีอะไรอยู่ แต่นี่คือแนวโน้มที่เราคาดหวังว่าจะมีบทบาทสำคัญในตลาดเครื่องดื่มในปี 2562

1. Personalized Functionality

ผู้บริโภคจำนวนมากให้ความสนใจดื่มเครื่องดื่มเพื่อประโยชน์ต่อสุขภาพมากขึ้น จากวัตถุดิบใหม่ๆ เช่น ขมิ้น ผงถ่าน ชาเขียวมัทฉะ สารเมลาโทนิน และว่านหางจระเข้ ที่เติมลงในเครื่องดื่ม ส่วนผสมเหล่านี้จะถูกเติมเข้ากับส่วนผสมอื่นๆ เช่น วิตามิน และอาหารเสริม เพื่อให้ผู้บริโภครับประทานได้ง่ายขึ้นและได้รับประโยชน์จากความสะดวกสบายและเป็นทางเลือกที่ดีต่อสุขภาพ

2. Plant-based, Non-dairy Beverages

ผู้บริโภคจำนวนหนึ่งมีวิถีดำเนินชีวิตแบบที่เรียกว่า Flexitarian คือรับประทานมังสวิรัติแต่รับประทานเนื้อสัตว์ เช่น ปลา หรือ นม เป็นบางครั้ง แต่ในขณะเดียวกันก็เพิ่มปริมาณการรับประทานผลิตภัณฑ์อื่นๆ ที่เป็นผลิตภัณฑ์จากพืชมากขึ้น เนื่องจากผู้บริโภคกลุ่มดังกล่าว มีความรับรู้ว่าผลิตภัณฑ์จากพืชทำให้มีสุขภาพที่ดีกว่า

3. Cannabinoid Beverages

Cannabidiol (CBD) เป็น Phytocannabinoid ค้นพบในปี 2483 เป็นหนึ่งใน Cannabinoids จำนวน 133 ชนิด ที่ระบุในพืชกัญชาคิดเป็นสัดส่วนถึงร้อยละ 40 ของสารสกัด ในปี 2561 วิจัยทางคลินิกเบื้องต้นพบประโยชน์ของสารสกัดกัญชาในเรื่อง ลดความวิตกกังวล เพิ่มการเรียนรู้ ลดความผิดปกติของการเคลื่อนไหวและลดความเจ็บปวด

4. Nootropic Drinks

คำว่า “Nootropics” ถูกกล่าวถึงครั้งแรกในปี 2515 โดยนักเคมีและนักจิตวิทยาชาวโรมาเนีย Corneliu E. Giurgea Nootropics หมายถึงยาอาหารเสริมและสารอื่นๆ ที่ช่วยปรับปรุงการทำงานของระบบสมองในด้านความรู้ความเข้าใจโดยเฉพาะอย่างยิ่งบริหารจัดการ หน่วยความจำ ความคิดสร้างสรรค์หรือแรงจูงใจ

 

 

Innovation is happening across every market segment, and beverages are fitting into more areas of people’s lives than we could have ever imagined. Looking ahead it’s difficult to know exactly what’s in store, but here are some of the trends we’re expecting will play a significant role in the beverage landscape in 2019.

1. Personalized Functionality​

Consumers are increasingly drawn to functional beverages for the health benefits of superfood and various ingredients like turmeric, activated charcoal, Matcha, melatonin and aloe Vera into their drinks. It blends the beverage industry with vitamins and supplements, benefitting convenience and healthy grab-and-go options.

2. Plant-based, Non-dairy beverages.

More people are adopting a flexitarian lifestyle, incorporating meat, dairy but also an increasing volume of plant-based products into their diet. Consumers hold the perception that plant-based products are healthier in moderation and more sustainable than their animal-based counterparts.

3. Cannabinoid Beverages

Cannabidiol (CBD) is a phytocannabinoid discovered in 1940. It is one of some 113 identified cannabinoids in cannabis plants, accounting for up to 40% of the plant’s extract. As of 2018, preliminary clinical research on cannabidiol included studies of anxiety, cognition, movement disorders, and pain.

4. Nootropic drinks.

The term “nootropics” it was first mentioned in 1972 by Romanian chemist and psychologist Corneliu E. Giurgea. Nootropics are drugs, supplements, and other substances that may improve cognitive function, particularly executive functions, memory, creativity, or motivation, in healthy individuals

On 16 February, 2019 the curtain came down on Food Pack Asia 2019, yet the success had already signaled since the first day of this 10th annual trade exhibition of international food and beverage processing, packaging and related industries held at Bangkok’s BITEC Exhibition Centre, Thailand. Throughout the 4-day event, crowds of local and foreign visitors and exhibitors flooded at the event for their best business opportunity despite uncertain current trade and business climate affected by the global powers’ trade competition especially between China and the US, a slowdown of economic growth across the globe, and the pre-national election period in Thailand, for example. Under the theme “Trend + Technology+ Innovation = Business Opportunity”, which responds to rising mixed trends and varieties of demand from the global and local markets in almost everywhere, Food Pack Asia 2019 brought in one place top producers and distributors from Thailand and abroad together with thousands of their high-quality products and services. Thus, the exhibitors and visitors not only could make their trades and exchange update information and knowledge but also experience the world’s latest food business trends, AI technologies, and award-winning R&D works applied to many successful food businesses. The exhibition consisted mainly of food processing machinery, packaging & printing technology, confectionery machinery, drink technology and related products and services, as well as 45 business talk and technology seminar sessions. Expectedly, following Food Pack Asia 2019 are further expansions and higher profits for several businesses after their experience at the event and some new players in Thailand’s food processing and packaging industries; keep going with great spirits for all players.

การควบคุมอาหารก่อภูมิแพ้ในอุตสาหกรรมอาหาร

สารก่อภูมิแพ้ทางอาหาร (Food allergen) หมายถึง อาหารที่ก่อให้เกิดอาการแพ้สำหรับบางคนที่มีภาวะเป็นโรคแพ้อาหาร ซึ่งเมื่อรับประทานอาหารที่ก่อภูมิแพ้เข้าไปแล้วจะทำให้ร่างกายเกิดอาการไม่พึงประสงค์ (Adverse Food Reaction; AFR) โดยแบ่งออกเป็น 2 กลุ่ม คือกลุ่มที่เกี่ยวข้องกับระบบภูมิคุ้มกัน แบ่งเป็น lgE Mediated reaction เช่น อาการแพ้ถั่วลิสงที่เกิดขึ้นภายใน 1 นาทีหลังจากกินเข้าไป และ Non lgE Mediated reaction ซึ่งส่วนใหญ่จะเกิดภายในเวลาไม่เกิน 2 ชั่วโมง และอีกหนึ่งกลุ่มคือ Food intolerances ซึ่งไม่เกี่ยวกับระบบภูมิคุ้มกัน เช่น Lactose intolerances โดยแบ่งออกเป็น 2 กลุ่มย่อย คือ Toxic reaction เช่น อาหารเป็นพิษ หรือได้รับพิษจากปลา และ Non-toxic reaction เช่น แพ้นม (Lactose intolerances)

 

ในปัจจุบันการระบุอาหารที่ก่อภูมิแพ้บนฉลากสินค้ามีความสำคัญต่อผู้บริโภคมากขึ้นทุกขณะเนื่องจากอาหารในปัจจุบันมีส่วนผสมที่มีความหลากหลายมากขึ้น ซึ่งอาจมีส่วนผสมของอาหารก่อภูมิแพ้ร่วมด้วย ผู้บริโภค รวมทั้งภาครัฐของประเทศต่างๆ จึงหันมาให้ความสนใจในการควบคุม รวมทั้งออกกฎระเบียบสำหรับการให้ข้อมูลบนฉลากแก่ผู้บริโภคให้สามารถเลือกซื้ออาหารที่ไม่ก่อให้เกิดอาการแพ้ต่อสุขภาพของตนเอง และเนื่องจากปัจจุบันยังไม่มีวิธีการรักษาอาการแพ้อาหาร แต่เป็นเพียงการรักษาเพื่อบรรเทาอาการแพ้ตามกรณีที่พบ รวมทั้งผู้บริโภคต้องหลีกเลี่ยงอาหารนั้นๆ ด้วยตัวเอง

 

แนวทางการจัดการหรือควบคุมอาหารก่อภูมิแพ้ในอุตสาหกรรมอาหารเพื่อไม่ให้ผู้บริโภคเกิดอันตรายหรือมีการปนเปื้อนโดยไม่ตั้งใจเกิดขึ้นสามารถทำได้หลายวิธี โดยโรงงานผู้ผลิตจะต้องมีมาตรการควบคุมและจัดการอาหารก่อภูมิแพ้เพื่อป้องกันและลดอันตรายที่อาจจะไปถึงผู้บริโภค ซึ่งปัจจุบันมาตรฐานที่นิยมนำไปประยุกต์ใช้ ได้แก่ BRC Food, FSSC 22000, ISO 22000 เป็นต้น ซึ่งในแต่ละมาตรฐานก็จะระบุข้อกำหนดที่โรงงานจะต้องปฏิบัติ

 

Food allergen means food that causes allergic reactions. People with food allergy experience adverse food reaction (AFR) after receiving the allergens. AFR can be divided into 2 groups; allergies associated with human’s immune system and food intolerances. The former group can also be divided into 2 categories; IgE Mediated Reaction such as an allergy to peanuts which shows symptoms within 1 minute after consuming and Non-IgE Mediated Reaction which shows symptoms within 2 hours after the intake. Meanwhile, food intolerance is not related to the immune system but human body responses to the allergy with toxic reactions or non-toxic reactions – lactose intolerance, for instance.

 

Nowadays, identifying food allergens on the label becomes more prominent to consumers, as food is getting more and more diverse and may contain ingredients that can potentially pose as allergens. Consumers, along with many governments, are paying more attention to the controlling and regulating food labelling to ensure that consumers can avoid food that they are allergic to. Since food allergy is still incurable, and can only be treated accordingly upon symptoms, consumers must be in charge of choosing their own food.

 

Food allergen management and control can be done through several processes. In order to prevent harm and unintentional contamination, food manufacturers must act to control and manage food allergens to protect customers and reduce possible risks. At present the standards such as BRC Food, FSSC 22000, and ISO 22000 are applied for allergen control in food manufacture, and each standard specifies requirements that the factory must follow.

การบริโภคอาหารที่มีโซเดียมสูงเป็นสาเหตุของการเกิดโรคไม่ติดต่อเรื้อรังที่เป็นปัญหาสุขภาพของประชากรไทย เช่น ความดันโลหิตสูง โรคหลอดเลือดหัวใจ อัมพฤกษ์อัมพาต และโรคไต รวมถึงส่งเสริมให้เกิดพฤติกรรมติดเค็ม ทำให้การลดปริมาณโซเดียมเป็นไปได้ยาก

 

องค์การอนามัยโลกได้กำหนดให้บริโภคโซเดียมไม่เกินวันละ 2,000 มิลลิกรัม ซึ่งเท่ากับเกลือประมาณ 1 ช้อนชา หรือน้ำปลาประมาณ 2 ช้อนโต๊ะ แต่จากผลการสำรวจที่ผ่านมาในประเทศต่างๆ ทั่วโลก รวมถึงประเทศไทย พบว่าประชากรส่วนใหญ่บริโภคโซเดียมมากเกินกว่าความต้องการของร่างกายถึง 3-4 เท่าตัวซึ่งถือว่าอยู่ในสถานการณ์อันตราย และถ้าไม่ได้รับการควบคุมอาจทำให้อัตราการเจ็บป่วยจากโรคเรื้อรังที่เกี่ยวข้องกับการบริโภคโซเดียมเพิ่มสูงขึ้นในอนาคต

 

วิธีการที่นิยมใช้ปรับลดปริมาณโซเดียมในผลิตภัณฑ์อาหาร คือ การใช้สารทดแทนเกลือ หรือโพแทสเซียมคลอไรด์ แต่อย่างไรก็ตาม การใช้โพแทสเซียมคลอไรด์อาจก่อให้เกิดรสเฝื่อนในผลิตภัณฑ์ รวมถึงยังมีข้อควรระวังในการใช้กับผู้ป่วยบางโรค เช่น โรคไต หรือโรคหัวใจ ที่ต้องจำกัดปริมาณโพแทสเซียม ดังนั้นการหาแนวทางในการปรับลดโซเดียมโดยไม่ส่งผลกระทบต่อรสชาติเค็มจึงมีความจำเป็น

 

ทางทีมผู้วิจัยได้ทำการศึกษากระบวนการการปรับลดขนาดอนุภาคเกลือทะเล (Particle size reduction) และใช้สารเสริมรสชาติ (Flavor induced saltiness) เพื่อใช้เป็นทางเลือกในการลดปริมาณโซเดียมหรือเกลือในผลิตภัณฑ์อาหาร โดยที่ผลิตภัณฑ์ยังคงมีรสชาติเค็มใกล้เคียงเดิม

 

High-sodium food consumptions cause chronic non-communicable diseases (NCDs) such as high blood pressure, coronary artery disease, paralysis, and kidney disease, which affect health problems for the Thai population. Eating behavior also influences people on a salty taste habit that makes it difficult to reduce sodium intake.

 

The World Health Organization (WHO) has determined not more than 2,000 milligrams of sodium an acceptable daily intake, which equivalent to about 1 teaspoon of salt or 2 tablespoons of fish sauce. Based on previous surveys in countries around the world, including Thailand, this pertains to the majority of the population consuming 3-4 times more sodium than the body’s needs. Over consumption of sodium is however considered dangerous. If not controlled, the rate of chronic illness related to sodium intake would be highly increased in the future.

 

A popular way to cut back sodium content in food products is to use salt substitutes or potassium chloride. However, the use of potassium chloride may cause unpleasant taste in the food product. Precautions for kidney disease or heart disease patients are necessary to limit the amount of potassium usage. Therefore, finding a tasteful way to reduce sodium without affecting salty flavor is essential.

 

The researchers studied the particle size of the sea salt reduction process and flavor induced saltiness as an alternative to reducing sodium or salt in food products, but maintaining a sensitivity to the taste as much salt as original.

มองภาพรวมตลาดและแนวโน้มการเติบโต

ก่อนจะล้วงลึกไปถึงอินกรีเดียนท์ที่มาแรง มาดูทิศทางด้านการตลาดสักเล็กน้อย โดยจากการวิจัยการตลาด Future Market Insights ได้คาดการณ์ว่ามูลค่าตลาดเครื่องดื่มฟังก์ชันนัลทั่วโลกจะเติบโตสูงถึงร้อยละ 6.3 ตั้งแต่ปี 2561 ถึง 25641 โดยตลาดที่ใหญ่ที่สุดต้องยกให้กับอเมริกาเหนือ รองลงมาคือเอเชียแปซิฟิก และยุโรป โดยเป็นที่จับตาว่าตลาดในภูมิภาคเอเชียแปซิฟิกและตะวันออกกลาง จะมีการเติบโตอย่างแข็งแกร่งต่อไปอย่างแน่นอน

สารออกฤทธิ์ทางชีวภาพ (Bioactive compounds) คือ สารจากสิ่งมีชีวิตตามธรรมชาติที่มีผลต่อสิ่งมีชีวิตทั้งคน สัตว์ และพืช โดยสารออกฤทธิ์ทางชีวภาพที่ดีต้องเป็นสารที่มีผลจําเพาะเจาะจงและสารนั้นจะต้องไม่มีผลในทางลบต่อร่างกาย หรือมีผลข้างเคียงน้อย ซึ่งสารออกฤทธิ์ทางชีวภาพมีหลายชนิด เช่น สารกลุ่มพอลิฟีนอล (Polyphenol) ฟลาโวนอยด์ (Flavoniod) แอนโทไซยานิน (Anthocyaine) ลูทีน (Lutein) และไบโอแอคทีฟเพปไทด์ (Bioactive peptide)¹ เป็นต้น ซึ่งในบทความนี้จะกล่าวถึงไบโอแอคทีฟเพปไทด์เเป็นหลัก

 

ในปัจจุบันมีหลักฐานทางวิทยาศาสตร์แสดงให้เห็นว่าโปรตีนจากอาหารประกอบด้วยลำดับกรดอะมิโมที่เป็นส่วนประกอบของเพปไทด์ที่มีฤทธิ์ทางเภสัชวิทยาซึ่งออกฤทธิ์ต่อร่างกายหลายอย่าง เช่น ต่อต้านอนุมูลอิสระ (Antioxidant) ปรับระบบภูมิคุ้มกัน (Immunomodulation) ลดความดันโลหิต (Anti-hypertension) ลดน้ำตาลในเลือด (Anti-diabetic) และลดไขมันในเลือด (Anti-dyslipidemic) โดยทั่วไปไบโอแอคทีฟเพปไทด์จะประกอบด้วยกรดอะมิโน 2-20 ชนิดและมีมวลโมเลกุลน้อยกว่า 6,000 ดาลตัน ซึ่งการเกิดหรือการผลิตไบโอแอคทีฟเพปไทด์นั้นจะเกิดจากกระบวนการย่อยด้วยน้ำ (Hydrolysis) โดยมีเอนไซม์ในกลุ่มโปรติเอส (Protease) เป็นตัวเร่งปฏิกิริยา ซึ่งทำให้เกิดเพปไทด์สายสั้นๆ หรือเกิดไบโอแอคทีฟเพปไทด์ขึ้น ซึ่งร่างกายจะสามารถดูดซึมเพปไทด์สายสั้นๆ ได้รวดเร็วกว่าในรูปกรดอะมิโน²

 

ปัจจุบันผู้บริโภคมีแนวโน้มที่จะหันมาบริโภคโปรตีนจากพืชและลดการบริโภคผลิตภัณฑ์จากสัตว์เพิ่มขึ้นอย่างต่อเนื่องทั้งในจีน ยุโรป และอเมริกา ทำให้โปรตีนจากพืชมีบทบาทมากขึ้นในอนาคตซึ่งรวมถึงไบโอแอคทีฟเพปไทด์จากพืชด้วย เช่น เพปไทด์จากถั่วเหลือง (Soy peptide)

 

Bioactive compounds are substances from natural organisms that affect human beings, animals and plants. Good bioactive compounds must be a substance that has specific effects and the substance must not create negative to the body or have few side effects to the body. There are many kinds of bioactive compounds such as polyphenol, flavoniod, anthocyanin, lutein, and bioactive peptide¹, and etc. This article will discuss mainly on the bioactive peptide.

 

At present, there is a scientific evidence to show that proteins from food contain the amino acids which are parts of peptides that have many pharmacological effects on the body such as antioxidant, immunomodulation, anti-hypertension, anti-diabetic, and anti-dyslipidemic. In general, bioactive peptides are composed of 2-20 amino acids and have a molecular mass of less than 6,000 Daltons. The bioactive peptide is produced from hydrolysis with having protease enzymes as a catalyst, causing short-chained peptides or formed of bioactive peptide, which the body can absorb short peptide faster in the form of amino acid² (Figure 1)

 

Nowadays, consumers mainly in China, Europe, and America tend to consume more of plant protein, while reduce consumption of meat products continuously, resulting plant protein, including bioactive peptide likes soy peptide to play more significant role in the future.

OEE หรือ Overall Equipment Effectiveness หรือที่เรียกกันว่า “ประสิทธิภาพโดยรวมของอุปกรณ์” เรามักเข้าใจกันว่า เครื่องตรวจสอบคุณภาพเป็นสาเหตุหนึ่งที่ทำให้กำลังการผลิตลดลง แต่ในความเป็นจริงแล้วเครื่องตรวจสอบคุณภาพที่ดีจะช่วยเพิ่มกำลังการผลิตและควบคุมคุณภาพเพื่อให้ได้มาตรฐานที่ดีได้เช่นกัน

สำหรับในอุตสาหกรรมการผลิตอาหาร เครื่องตรวจจับโลหะ (Metal detector) เป็นเครื่องที่มีความจำเป็นอย่างมาก แต่ในขณะเดียวกัน หากเลือกใช้เครื่องที่ไม่เหมาะสมหรือไม่มีประสิทธิภาพเพียงพอ ย่อมส่งผลกระทบโดยตรงต่อการผลิตผลโดยรวม และคุณภาพ

เทคโนโลยีในการตรวจสอบประสิทธิภาพของเครื่องได้ด้วยตัวเอง พร้อมทั้งบ่งบอกสถานะความพร้อมในการใช้งาน ให้กับผู้ใช้งานทราบ รวมถึงการแจ้งเตือนเมื่อเครื่องมีปัญหาต่างๆ จะช่วยลดการเกิดการหยุดกระบวนการผลิตโดยไม่จำเป็นได้

ทั้งนี้ การหยุดกระบวนการผลิต เพื่อทำการทวนสอบ (Routine performance monitoring) เครื่องตรวจจับโลหะบ่อยๆ เป็นสาเหตุหนึ่งที่มีผลกระทบต่อ OEE อย่างมาก เทคโนโลยีในปัจจุบัน มีซอฟแวร์ที่สามารถยืนยันถึงประสิทธิภาพของเครื่องได้โดยสามารถลดความถี่ในการทำทวนสอบ ลงได้ นอกจากนั้น การลดระยะเวลาของการทวนสอบ ก็เป็นตัวช่วยหนึ่ง ที่จะช่วยเพิ่มประสิทธิภาพโดยรวมของเครื่องตรวจจับโลหะได้ เทคโนโลยีดังกล่าวเรียกว่า ระบบออโต้เทส (Auto Test) โดยเป็นการติดตั้งอุปกรณ์เสริมให้กับเครื่องตรวจจับโลหะ เทคโนโลยีนี้ สามารถช่วยลดระยะเวลาในการทำการทวนสอบ ได้มากกว่าร้อยละ 80 เลยทีเดียว และเป็นวิธีการเดียวเท่านั้นที่สามารถยืนยันประสิทธิภาพการตรวจจับสิ่งปนเปื้อนที่กลางอุโมงค์ของเครื่องตรวจจับโลหะได้อย่างแท้จริง

 

The Overall Equipment Effectiveness (OEE) is generally known as a quality diagnostic tool.  It is sometimes considered, yet equivocally, as one of the factors that may compromise the production capacity. In reality, a good quality monitoring device can boost the manufacturing capacity, enhance the quality control processes, and ultimately help achieve optimum standards.

In the food manufacturing industry, a metal detector is undeniably indispensable. If such device is inefficient or has unsuitable qualities, there will be direct negative impacts on the overall quality and production.

A self-reliant effectiveness monitoring technology, with indicators that inform users of its operational status or warn them of possible problems, will help reduce any unnecessary disruptions of the production lines.          Frequent disruptions of the manufacturing processes due to routine performance monitoring of metal detectors are one of the causes that dramatically impact the OEE. With the help of the modern-day technology and software, a machine’s effectiveness can be checked and confirmed while the frequency of the disruptive routine performance monitoring can be lessened. Besides, the shortened duration of such monitoring activities is also another beneficial factor that helps improve the overall effectiveness of metal detectors. Such technology, which is known as the Auto Test, involves additional accessories installed on metal detectors and can cut down the length of performance monitoring process by more than 80 percent. It is also the only way that can truly confirm the effectiveness of contaminant detection at the middle section of a metal detector’s tunnel.

ในปัจจุบันอุตสาหกรรมบรรจุภัณฑ์พลาสติกไทยเริ่มมีการเติบโตในอัตราที่ช้าลง โดยเฉพาะอย่างยิ่งบรรจุภัณฑ์พลาสติกแบบคงรูป (Rigid plastic packaging) อันเนื่องมาจากการเปลี่ยนแปลงด้านประชากรและวิถีชีวิต รวมถึงบรรจุภัณฑ์พื้นฐาน เช่น ถุงหูหิ้ว หลอดพลาสติกที่มีแนวโน้มถูกใช้งานน้อยลงจากกระแสรักษ์โลกและการรณรงค์ของภาครัฐและภาคเอกชน

 

อีไอซีมองว่าผู้ผลิตบรรจุภัณฑ์พลาสติกควรปรับกลยุทธ์ให้เหมาะสมกับการเปลี่ยนแปลง โดยปรับลดสัดส่วนการลงทุนในบรรจุภัณฑ์ประเภทใช้ครั้งเดียวทิ้ง และควรเพิ่มสัดส่วนการลงทุนในพลาสติกแบบอ่อนตัว (Flexible packaging) ที่มีมูลค่าเพิ่ม ซึ่งมีกำไรขั้นต้นราวร้อยละ 20 ในขณะที่กำไรขั้นต้นของพลาสติกแบบพื้นฐานมีกำไรขั้นต้นอยู่ที่ร้อยละ 5-10 รวมถึงการนำนวัตกรรมมาช่วยสร้างมูลค่าเพิ่มให้กับผลิตภัณฑ์ เช่น นวัตกรรมควบคุมความชื้นในบรรจุภัณฑ์ ควบคู่ไปกับการปรับกลยุทธ์การผลิตและออกแบบบรรจุภัณฑ์ หรือใช้เม็ด Bio-plastic เพื่อขึ้นรูปบรรจุภัณฑ์เพื่อลดผลกระทบต่อสิ่งแวดล้อม

 

การใช้บรรจุภัณฑ์พลาสติกในประเทศไทยมีแนวโน้มเติบโตช้าลง

แม้ว่าที่ผ่านมาอุตสาหกรรมบรรจุภัณฑ์พลาสติกสามารถขยายตัวได้อย่างต่อเนื่อง โดยในช่วงปี 2551-2555 ปริมาณการใช้บรรจุภัณฑ์พลาสติกมีอัตราการเติบโตถึงร้อยละ 7 ต่อปี และเริ่มชะลอตัวลงเหลือร้อยละ 3 ต่อปี ในช่วงปี 2556-2560 โดยเมื่อศึกษาในสัดส่วนของบรรจุภัณฑ์พลาสติกแล้ว พบว่าปริมาณการใช้พลาสติกคงรูปเริ่มมีอัตราการเติบโตของการบริโภคที่ลดลงในช่วง 5 ปีที่ผ่านมา ซึ่งปริมาณดังกล่าวถูกแทนที่ด้วยพลาสติกแบบอ่อนตัว

 

Presently, the growth of the plastic packaging industry in Thailand has grown slowly, especially for the rigid plastic packaging segment. This is due to changes in the population structure, as well as lifestyle. Meanwhile, producers of fundamental plastic goods, such as plastic carrier bags and straws, are facing increasing risks from the rising trend of saving the planet backed by campaigns from both the public and private sectors. Consequently, the use of mentioned plastic products is likely to decrease. Thus, plastic packaging producers will need to adapt to cater to these changes.

 

EIC views that plastic packaging producers should alter their strategy to suit the recent changes. One such strategy is to reduce investment in single-use plastic packaging while increasing investment in flexible plastic packaging, which has a higher added-value. In comparison, flexible plastic packaging has 20% gross-profit margin while fundamental plastic products are at 5-10%. Another possible strategy is to introduce an innovation to create additional value, such as an innovation to control moisture in the packaging, alongside adjusting design and production process. Businesses may also consider using bio-plastic resin to create packaging that will help to lessen impacts on the environment.

Usage of Plastic Packaging in Thailand is Showing Signs of Slowing Down

Contrary to the strong growth experienced by the plastic packaging industry previously, the growth is showing signs of slowing down. Between 2008-2012 usage of plastic packaging grew 7% per year before falling to 3% per year between 2013-2017. When assessing the share of plastic packaging usage, it was found that the use of rigid plastic packaging that has experienced continuous growth has reduced in the past 5 years. The share was replaced by the use of flexible plastic packaging.
