The commercial advantage of keeping individually-quick frozen (IQF) vegetables in stock continues to drive their demand among retailers, grocery stores and independent fruit and vegetable vendors from around the world. The global demand for IQF vegetable is expected to rise on the account of their longer shelf lives, speedy processing of foods and robust supply chain.

In fact, Future Market Insights, Valley Cottage, N.Y., projects that such factors will instrument a steady growth in global consumption of IQF vegetables. By the end of 2026, more than 25,000 tons of IQF vegetables will be sold across the globe, bringing in revenues worth over USD 2,000 million.

The report, “IQF Vegetable Market: Global Industry Analysis and Opportunity Assessment, 2016-2026,” estimates that the global market for IQF vegetables is presently valued over USD 1,288.3 million, recording global sales of a little over 16,900 tons of IQF vegetable in the world. However, in terms of volume and value, the global IQF vegetable market is expected to showcase a moderate growth over the forecast period. งานแสดงสินค้านานาชาติด้านผักและผลไม้แห่งภูมิภาคเอเชียเปิดฟลอร์ต้อนรับผู้เข้าร่วมชมงานในปีนี้จำนวน 13,500 ราย ซึ่งเพิ่มมากขึ้นจากปีที่ผ่านมา เมื่อวันที่ 5-7 กันยายน 2561 ณ AsiaWorld-Expo Center ฮ่องกง สำหรับงานในปีนี้เน้นส่งเสริมกิจกรรมทางธุรกิจหลากหลายรูปแบบ โดยได้รับความสนใจจากผู้เข้าร่วมชมงานมากขึ้นซึ่งทุกคนล้วนเป็นผู้ค้าระดับคุณภาพจากกว่า 70 ประเทศทั่วโลก ประกอบด้วยผู้ซื้อซึ่งเป็นตัวแทนของตลาดหลักๆ ทั่วทั้งเอเชียอีกกว่า 20 แห่ง

There’s been high business activity on the trade show floor, active participation in the Hall Forums, and high-profile trade visitors from over 70 countries, including buyers representing more than 20 key markets across Asia. Some 13,500 trade visitors poured through the doors of Hong Kong’s AsiaWorld-Expo Center on 5-7 September, marking a healthy increase in attendance on last year’s edition.

The vast majority (90 per cent) of trade visitors confirmed a positive impression of this year’s trade show, according to visitor survey results. The results also confirmed the high quality of trade visitors, with 89 per cent holding leading management positions in their companies, and 87 per cent closely involved in the purchasing and procurement decision-making process. Visitors found an exhibition that had expanded again, with overall floor space growing by 10 per cent on last year’s edition. Exhibitor numbers saw a further increase to 826 companies representing 46 different countries and all continents. The number of national pavilions also increased this year, with some 27 countries featured.

Hall Forums COOL LOGISTICS ASIA and SMART HORTICULTURE ASIA. Sessions on packaging, cold chain investments and blockchain attracted the highest numbers.

Taking place the day before ASIA FRUIT LOGISTICA, ASIAFRUIT CONGRESS celebrated its 20th anniversary with a bumper crowd. More than 450 delegates from 41 different countries attended Asia’s premier conference event on 4 September, marking a 20 per cent increase on last year’s edition, and a record number since the event moved to AsiaWorld-Expo in 2012.

The next edition of ASIA FRUIT LOGISTICA takes place on 4-6 September 2019 at AsiaWorld-Expo Center in Hong Kong. ASIAFRUIT CONGRESS takes place on 3 September at the same venue.

วิธีที่เหมาะสมกับการละลายอาหารแช่แข็ง คือ วิธีที่รวดเร็วที่สุด (Fast thawing) แต่ต้องระมัดระวังไม่ให้อุณหภูมิไม่สูงเกินไปจนเชื้อจุลินทรีย์ที่ผิวหน้าหรือในอาหารสามารถเจริญได้อย่างรวดเร็ว ซึ่งปัญหานี้จะหมดไป หากผู้บริโภคนำอาหารไปปรุงผ่านความร้อนที่สามารถทำลายจุลินทรีย์ได้ และบริโภคจนหมด

การละลายที่รวดเร็วนั้นจะให้อาหารที่คืนตัวมีคุณภาพดีกว่าการใช้เวลานาน (Slow thawing) การละลายที่ใช้เวลานานจะก่อให้การสูญเสียน้ำจากอาหารเป็นจำนวนมาก เนื่องจากการเกิดผลึกน้ำแข็งใหม่มักจะทำลายผนังเนื้อเยื่อของเซลล์ ซึ่งเป็นสาเหตุหนึ่งที่ทำให้เนื้อเยื่อไม่สามารถดูดซึมน้ำกลับได้ นั่นคือ น้ำที่เห็นไหลซึมออกมาจากอาหารแช่แข็ง ซึ่งมักจะเป็นผลเสียต่อสี รส คุณค่าทางอาหาร และเนื้อสัมผัสของอาหาร การเกิดน้ำลายน้ำแข็ง (Drip หรือ Thaw exudate) นี้มีปัจจัยเนื่องจากโครงสร้างอาหาร การเปลี่ยนแปลงทางเคมี ชีวเคมี และเคมีกายภาพของอาหาร รวมถึงวิธีการแช่แข็ง การเก็บรักษาในสภาพเยือกแข็ง และการละลายอาหาร

Ice has properties to conduct heat (thermal conductivity) 4 times better than water and 9 times better than water on a heat dissipation (thermal diffusivity). Hence, when defrosting food by surface heating, it causes movement of water in the meat tissues (non-convection of water in tissue). The ice crystal then transmits the heat that changes the temperature faster than water (stay still). We, therefore, can see the surface of food melting at a fast rate. When the surface gets dissolved, the water slows down the transmission and the temperature of the food, allowing it to take longer to thaw before passing latent heat to the ice. That is why defrosting takes a long time. Often notice that the food looks well dissolved outside, but once have it cut, the center remains frozen.

In short, the proper way to dissolve frozen foods is fast thawing, but considers not to over-temperature that the microorganisms can grow quickly on the surface or inside of the food.
This problem will be eliminated if consumers cook with the temperature high enough to destroy the microorganisms and finish all of those food.

Fast thawing provides better quality food than slow thawing. Slow thawing causes a large amount of water loss from food. Because recrystallize often destroys the cell wall. This is one of the reasons why the food tissue cannot reabsorb the drip. The drip loss of frozen food causes undesirable color, taste, nutrition, and texture of the foods. The drip or thaw exudate depends on such factors like food structure, chemical change, bio and physical chemistry of food, including freezing method, frozen storage, and thawing.

The Economy of Myanmar
Myanmar witnessed a significant economic improvement between 2011-2017, during which economic growth jumped from less than 6% to 7.2%. The growth is largely driven by the demand for the country’s abundantly rich natural resources and cheap labor, which have propelled streams of foreign direct investments in energy, clothing, information technology, food and beverage. The government led by Aung San Suu Kyi is also targeting to increase agricultural yielding with modern technology and land reforms to benefit the poor, and at the same time, liberalizing the financial sector and develop infrastructure in transportation and power grid. There is also an attempt to improve transparency in mining and petroleum by issuing Extractive Industries Transparency Initiative (EITI) in 2016 and 2018.

Trade between Thailand and Myanmar
Trade between the two Southeast Asian nations in 2017 reached USD 6,784.23 million, and Thailand is enjoying the positive balance of USD 4,308 million.
– Exports from Thailand: refined oil, beverages, chemicals, steel, machinery, fabric, cosmetics, wheat products, processed foods, and thermoplastic
– Imports from Myanmar: natural gas (accounting for 75% of imports from Myanmar), minerals, meat products, livestock, fisheries, plants and lumber

Foreign Direct Investment (FDI)
From April 2017 to March 2018, foreign direct investment in Myanmar reached USD 5,718 million, with Singapore ranks as the top investor pouring in USD 2,164 million. The island country is followed by China who invested USD 1,395 million, the Netherlands and South Korea. Thailand is the 9th biggest investor with USD 124 million investments. The most popular industries are manufacturing, property, transportation, telecommunication, hotel and tourism.

The technique of smoking is experiencing a resurgence in popularity, to impart flavour, colour and aroma to meat, poultry and seafood. From smoked jerky and sausage to pastrami and salmon, the possibilities are endless. According to Mintel, 2017 recorded a 19% growth in the ‘Smoke’ and ‘BBQ’ flavours in food and beverage globally compared to 2015.

Smoking is one of the oldest food preservation methods, dating back to the prehistoric age when our ancestors used it to preserve protein-rich food such as fish and meat. With the evolution of smoke flavours today, it is used not only for preservation but also to give a new twist to traditional product and provide more flavour variety and new experience for the consumer.

To achieve the desired smoke profile and top notes, the choice of wood is just as critical as the type and cut of meat. Whilst conventional woods such as hickory and mesquite are good for heavily flavoured meat, fruitwood such as apple imparts a subtly sweet, fruity flavour and is recommended for meat without much seasoning. With progressive smoke technology that filters and removes ashes and tars, the use of smoke condensates for meat flavouring could help manufacturers create a much healthier product.

The appeal for smoke technologies is apparent as the distinctive smoked flavour not only enhances consumers’ taste experience, it also helps to meet the growing nutritional demands for clean, authentic meat.

Smoke application also presents tremendous growth opportunities for the industry, with forward-looking manufacturers starting to expand into smoky flavours for dairy, desserts and even beverages, too.

ผักและผลไม้สดพร้อมบริโภคหรือผลไม้สดหั่นชิ้น (Minimally processed vegetables: minimally processed fruit หรือ Fresh-cut fruit) หมายถึง ผักและผลไม้สดที่ผู้ขายนำมาล้าง ปอกเปลือก ผ่าซีก เอาไส้และเมล็ดออก ตัดแต่ง หั่นชิ้น บรรจุใส่ภาชนะและวางจำหน่ายให้ผู้บริโภคเลือกซื้อได้ตามใจชอบและสามารถนำไปบริโภคได้ทันที ทำให้ประหยัดเวลา ปัจจุบันจึงมีผักและผลไม้สดพร้อมบริโภควางจำหน่ายเพิ่มมากขึ้นทั้งในตลาดสดและซูเปอร์มาร์เก็ต เช่น ผักสลัด ผักจัดชุดสำเร็จรูป (สำหรับทำแกงจืด แกงส้ม) ผลไม้อาทิ สับปะรด แตงโม แคนตาลูป ส้มโอ มะละกอสุก มะม่วงดิบ ชมพู่ ขนุน และฝรั่ง เป็นต้น

ปัจจุบันพบว่าผักและผลไม้สดตัดแต่งในรูปแบบการแช่เย็นได้รับความนิยมสูงขึ้นกว่ารูปแบบการแช่เยือกแข็งเนื่องจากความสะดวกในการรับประทานที่ง่ายกว่า และรสชาติของผักและผลไม้ดีกว่าในรูปแบบการแช่เยือกแข็ง ทั้งนี้ การแช่เยือกแข็งมักทำให้ผลิตภัณฑ์ผักและผลไม้เกิดการเปลี่ยนแปลงทั้งด้านเคมีและกายภาพ

The Seasoning, Sauce and Condiment Production industry produces goods such as mayonnaise, salad dressings, spices, extracts and dry food mixes from a variety of ingredients, which are then sold to wholesalers, other food manufacturers and retailers. Since this industry produces a wide array of products, some segments have performed better than others over the five years to 2018. Hot sauce and ethnic spices have been on the rise while traditional condiments, such as mayonnaise and salad dressings, have not performed as well. The industry’s future appears positive, with demand for seasoning, sauce and condiments expected to remain consistent over the five years to 2023

Sauce production is a rapidly developing and innovative category worldwide, with an already wide and growing range of value-added sauce products. This places high demands on productions and product innovation. Optimal sauce production and solution have been created to meet needs and enable manufacturers to serve demands from retailers, food services, industrial customers and consumers.

In order to achieve those demands both in the US and other emerging markets which probably have the same tendency, manufacturers might need to re-consider which kind of production technology will be the most suitable for them. Currently, there are roughly 4 to 5 types of lines that can be used for sauces and condiments such as continuous line, continuous with particulate line, batches and dehydration line.

It has been taking as a common practice in order to provide mutual benefit for the business and the consumers, as well as boosting the industry’s image.

CRP for Frozen Food
The code of recommended practices for frozen food emphasizes on the handling of manufactured frozen products, which is most time ignored by handlers outside the manufacturing process and those who lacks good understanding about frozen food.

Quality problems of frozen foods usually occurred in the post production process known as cold chain, where frozen foods are stored and distributed to various locations. Frozen food enterprises must recognize that the success of the industry relies on its ability to produce and assure the product’s quality until the food reaches the hands of ultimate consumers. Here, the food must live up to the quality (or even a better quality) it possesses when it came out of the production line.

Human Milk Oligosaccharides (HMO) is a breakthrough differentiator: they are the third largest solid component in human milk, following lactose and fat. The amount is about 300 times higher compared with bovine milk. The HMO composition of human milk is complex and varies significantly among mothers, over the course of lactation and according to their genetic set-up. The HMO concentration in early milk is highest and it declines by about 30% over the course of lactation. In mature human milk, the content may still be as high as 5 – 20g/L compared to less than 0.05g/L of bovine milk.

Today, more than 200 HMO molecules have been identified, of which 2’-fucosyllactose (2’-FL) is the most abundant in most mothers. Up to now, galacto-oligosaccharides (GOS) and fructo-oligosaccharides (FOS) have often been added to infant formula to mimic HMOs. However, both do not occur in human milk. On the other hand, fucose and sialic acid which appear to be important structural and functional components of HMOs are absent in infant formula with GOS/FOS. Thus, the availability of HMOs with molecular structures identical to those occurring in human milk, is a breakthrough in infant nutrition.

In the meantime, mechanistic studies shed light on this observation: due to the specific molecular structure, 2’-FL is able to act as a decoy receptor for pathogens. Instead of
binding to the carbohydrate receptors on the intestinal cell surfaces, pathogens bind to 2’-FL and the adhesion to the host cells – the first step of infections – can be prevented. Moreover, 2’-FL can directly modulate intestinal cell responses and the thus strengthen the mucous barrier.

Recent data suggest that 2’-FL can directly attenuate inflammation in experimental models. This confirms HMOs as being an “innate” immune system of human milk whereby the mother protects the vulnerable newborn child. 2’-FL can also represent a novel preventative active to reduce mucosal inflammation associated with diverse bowel disorders.
