โดยเชื่อมโยงกับการระบาดของโรคอาหารเป็นพิษที่เกิดขึ้นเมื่อวันที่ 13 กรกฎาคม 2560 ที่ผ่านมา มีผู้ป่วยจากเชื้อซัลโมเนลลา 12 รายใน 4 จังหวัด ระหว่างเดือนเมษายน-มิถุนายน 2560 โดยจำนวน 5 รายมีรายงานในอัลเบอร์ตา และอีก 5 รายในออนแทรีโอ อีกจังหวัดละ 1 รายในบริทิช โคลัมเบีย และนิว บรันซ์วิค ในจำนวนนี้ 2 รายต้องพักรักษาในโรงพยาบาล ไม่มีรายงานผู้เสียชีวิต 2 ใน 3 รายเป็นผู้ชาย อายุเฉลี่ยของผู้ป่วย 23 ปี

ตัวอย่างนักเก็ตไก่สูตรพิเศษเพรสซิเดนท์ชอยซ์น้ำหนัก 800 กรัม ระบุวันหมดอายุเป็น 15 มีนาคม 2561 เก็บตัวอย่างจากร้านค้าปลีก ให้ผลการทดสอบเป็นบวกต่อเชื้อ Salmonella Enteritidis และมีลายพิมพ์ดีเอ็นเอสอดคล้องกับตัวอย่างจากผู้ป่วยที่มีรายงานการระบาด

หน่วย CFIA กำลังร่วมมือกับภาคอุตสาหกรรมในการสร้างความมั่นใจว่า สินค้าเหล่านี้จะถูกนำออกจากชั้นวางสินค้า โดยการสอบสวนยังคงดำเนินการต่อไป และเชื่อว่าน่าจะพบความเชื่อมโยงสินค้ากับการระบาดของโรคเพิ่มขึ้น โดยสาธารณสุขจะแจ้งข้อมูลล่าสุดให้ทราบตามลำดับ

Loblaw Companies has recalled President’s Choice brand Pub Recipe Chicken Nuggets, which have been tied to the outbreak by the Canadian Food Inspection Agency

Loblaw Companies Ltd. is recalling President’s Choice brand Pub Recipe Chicken Nuggets from the marketplace because of possible Salmonella contamination. The recall was announced by the Canadian Food Inspection Agency (CFIA). A CFIA investigation revealed that the uncooked breaded chicken nugget products have been connected with a foodborne illness outbreak.

As of July 13, 2017, there were 12 cases of Salmonella illnesses in four provinces between April and June. Five of those cases were reported in Alberta, five were reported in Ontario and there has been one case in both British Columbia and New Brunswick. Two people have been hospitalized. No deaths have been reported. Two thirds of the people affected were males, and the average age of those people is 23.

A sample of President’s Choice brand Pub Recipe Chicken Nuggets (800 g), with best before date 2018 MR 15, collected from a retail establishment tested positive for Salmonella Enteritidis and had the same genetic fingerprint as the cases of human illness reported in this outbreak.

CFIA is working with industry to ensure the product is removed from the retail market. The investigation is ongoing and it is possible that more products linked to the outbreak investigation may be identified. The public health notice will be updated on a regular basis as the investigation evolves.

นักวิจัยสหรัฐอเมริกาตื่นเต้นไปกับการค้นพบการฆ่าไก่ที่มีประสิทธิภาพโดยใช้ปิดการระบายอากาศ (Ventilation Shutdown; VD) ร่วมกับการให้แก๊สคาร์บอนไดออกไซด์หรือความร้อน โดยมีการเผยแพร่ในสมาคมสัตว์ปีกและไข่ สหรัฐอเมริกา (US Poultry and Egg Association) ว่าเป็นวิธีการที่เหมาะสำหรับการปลดแม่ไก่ไข่บนกรงตับ

โครงการนี้เป็นหนึ่งในแผนการทำงานของสมาคมฯ ตั้งแต่เดือนตุลาคม 2558 ภายหลังการระบาดใหญ่ของโรคไข้หวัดนก บทเรียนจากประสบการณ์ครั้งนั้น คือ การปลดไก่ให้ทันเวลาถือเป็นสิ่งสำคัญต่อการควบคุมการแพร่กระจายโรค วิธีการที่ใช้สำหรับการปลดไก่ ได้แก่ การใช้รถบรรจุแก๊สคาร์บอนไดออกไซด์ การฉีดแก๊สคาร์บอนไดออกไซด์ และการใช้โฟมในถังดับเพลิง ซึ่งช่วยให้การดำเนินงานเป็นไปอย่างรวดเร็ว เนื่องจากฟาร์มที่เกิดโรคระบาดมีจำนวนมาก เวลาที่ช้าเกินไปจะสร้างความทรมานแก่สัตว์เป็นเวลานานเกินไป

ระบบการชัตดาวน์การระบายอากาศคืออะไร?
ระบบการชัตดาวน์การระบายอากาศ (Ventilation shutdown) เป็นการหยุดการระบายอากาศตามธรรมชาติ หรือโดยวิธีกลในการนำอากาศเข้าสู่ภายใน โดยอาจเพิ่มอุณหภูมิบรรยากาศร่วมหรือไม่ก็ได้ เพื่อให้สัตว์ปีกตายอย่างสงบจากภาวะอุณหภูมิในร่างกายสูง (Hyperthermia)

เป้าหมายคือ การให้อุณหภูมิภายในโรงเรือนสูงขึ้นกว่า 104 0F หรือ 40 0C ภายในเวลา 30 นาที และรักษาอุณหภูมินี้ไว้เป็นเวลา 3 ชั่วโมง โดยไม่หยุดการให้น้ำ และยังคงใช้พัดลมหมุนเวียนอากาศภายในโรงเรือน ช่วยรักษาอุณหภูมิให้ทั่วถึงทั้งโรงเรือน

US researchers have found that the effectiveness of culling through ventilation shut down (VSD) is enhanced by the addition of carbon dioxide or heat. The study, published this week by the US Poultry and Egg Association, looked at using ventilation shutdown as a humane depopulation method for caged layers.

It was one of a number of projects commissioned by the Association in October 2015 following the huge bird flu outbreak. Among the lessons learned from the outbreak was that timely depopulation was critical to contain the spread of the disease. The methods used included carbon dioxide kill-carts, carbon dioxide injection and fire-fighting foam were quickly overwhelmed by the scale of the outbreak leading to prolonged suffering of infected birds.

What is Ventilation Shutdown?
Ventilation shutdown is defined as the cessation of natural or mechanical ventilation of atmospheric air in a building where birds are housed, with or without action to increase the ambient temperature. The cause of bird death is hyperthermia.

The goal is for the house temperature to exceed 104 0F or 40 0C within 30 minutes and to hold the temperature for three hours. Water for the birds to drink is not turned off and circulation fans within the house maybe used to help equilibrate the temperature throughout the house.

ปริมาณการบริโภคไก่ปีนี้เพิ่มสูงเป็นประวัติการณ์โดย 9 ใน 10 คน ซื้อเนื้อไก่ไปบริโภคเป็นประจำ

กระทรวงเกษตรแห่งสหรัฐอเมริกา คาดว่าชาวอเมริกันจะบริโภคเนื้อไก่เกือบ 41.7 กิโลกรัมต่อคน ทำสถิติสูงขึ้นจากปีที่แล้ว 41.3 กิโลกรัม ถึงกระนั้น ผู้บริโภคก็มีข้อกังวลเกี่ยวกับความปลอดภัยอาหาร ยาปฏิชีวนะ และการใช้ฮอร์โมนหรือสเตียรอยด์

A record amount of chicken is set to be eaten by US consumers this year with nine in ten people regularly purchasing poultry.

The US Department of Agriculture is projecting that Americans will eat nearly 92lbs of chicken per person, topping last year’s record of 91lbs. But despite the record figures, consumers do have underlying concerns about food safety, antibiotics and use of hormones or steroids.

The National Chicken Council-commissioned survey looked at consumer behaviour among more than 1,000 adults during early June. It found that 84% of respondents said they had eaten a chicken meal or snack purchased from a supermarket in the fortnight leading up to the survey, while 67% had consumed a meal or snack from a restaurant. Although these figures are slightly down on last year’s results, the survey found that 21% of consumers anticipate eating more chicken from the supermarket and 13% think they will eat more from a food service establishment over the next 12 months. Younger, more ethnically diverse people living in larger households tended to eat more chicken.

Tom Super, National Chicken Council’s senior vice-president of communications, said he believed chicken was still extremely popular: “The data shows that chicken is still top of mind for consumers,” he added. Consumers rated freshness, taste and price as very important when purchasing chicken.

Millennials are twice as likely as their older counterparts to buy pre-cooked chicken and eat it in store, the survey found. When prompted, nearly seven in ten consumers said they were either very or extremely concerned about food safety, while 57% said they were worried about hormone/steroid use and 55% about antibiotic use. And there is evidence of growing welfare concern about the time it takes to raise a chicken – 26% said they were extremely or very concerned compared to 19% last year.

ปัจจุบันนักโภชนาการและผลวิจัยส่วนใหญ่ต่างยอมรับเป็นเสียงเดียวกันว่า “ไข่ไก่” เป็นอาหารชนิดเดียวที่มีสารอาหารครบถ้วนเกือบทุกชนิดที่จำเป็นต่อร่างกาย โดยเฉพาะโปรตีนที่มีคุณภาพดีที่สุด เพราะเป็นโปรตีนชนิดเดียวที่มีกรดอะมิโนจำเป็นครบถ้วนตามที่ร่างกายต้องการ

ที่สำคัญองค์การอนามัยโลก (World Health Organization; WHO) ใช้โปรตีนไข่ (Egg proteins) และกรดอะมิโน (Amino acids) เป็นค่าเปรียบเทียบเพื่อประเมินคุณภาพโปรตีนกับอาหารชนิดอื่นๆ นอกจากนี้ ไข่ยังเป็นแหล่งแร่ธาตุและวิตามินที่ครบถ้วน ยกเว้นเพียงวิตามินซีและเคเท่านั้น

“ไข่ไก่” จึงถือได้ว่า “เป็นอาหารบำรุงร่างกายที่ดีที่สุด ที่หาได้ง่าย ราคาย่อมเยา เหมาะสมกับทุกเพศทุกวัย”
ผู้เขียนขอยกตัวอย่างสารอาหารสำคัญบางชนิด ซึ่งสารอาหารชนิดหนึ่งที่ถือว่าเป็นไฮไลท์ของไข่ไก่ คือ โคลีน (Choline) เนื่องจากเป็นสารอาหารที่สำคัญและจำเป็นต่อคุณแม่ที่กำลังตั้งครรภ์ และคุณแม่ที่อยู่ระหว่างการให้นมบุตร นอกเหนือจากโคลีนจะช่วยบำรุงสมองและเสริมความจำแล้ว จากงานวิจัยหลายชิ้นยืนยันว่า โคลีนยังเป็นสารอาหารที่ช่วยชะลอความแก่ เรียกว่าเป็นสารอาหารที่มีประโยชน์ต่อคนเราในทุกช่วงชีวิต ตั้งแต่เป็นทารกจนวัยชราเลยทีเดียว

ส่วนลูทีน (Lutein) และซีแซนธีน (Zeaxanthin) เป็นสารต้านอนุมูลอิสระที่พบในไข่แดง ซึ่งช่วยชะลอโรคจอประสาทตาเสื่อม และในการผลิตไข่ไก่สมัยใหม่ยังสามารถเพิ่มปริมาณแร่ธาตุ เช่น โอเมก้า-3 DHA EPA ให้สะสมในไข่มากขึ้น เพื่อผู้บริโภคได้รับประโยชน์จากแร่ธาตุดังกล่าวได้โดยตรง

Nutritionists and results from most studies have all agreed that “Chicken eggs” are the only food source containing all the necessary nutrients our body needs, especially the high-quality protein with all the essential amino acids our bodies required.

Also notably is the fact that proteins and amino acids in eggs are used by the WHO as the standard against which to evaluate and make assessments on the quality of proteins in other foods. Furthermore, eggs are the complete source of all the essential minerals and vitamins, except for vitamin C and K.

Therefore, “chicken eggs” can be considered the best nourishing food for our bodies that are convenient, inexpensive, and suitable for everyone. To illustrate this, let’s look at some of eggs’ important nutrients. One of the star nutrients found in eggs is Choline, which is the essential nutrient for pregnant women and breast-feeding moms. Apart from its benefit in brain development and functions, as well as memory improvement, many studies have confirmed that Choline also has the effect in slowing body aging process. It is, therefore, an essential nutrient for every stage of our lives, from birth all the way to old age.

Lutein and Zeaxanthin are the anti-oxidants found only in egg yolk that help reduce the risk for age-related macular degeneration. Moreover, in the modern egg productions, many important nutrients–such as omega-3; DHA; and EPA– can be added, increased, and fortified, so that consumers can benefit more from these nutrients.

แม้ว่าที่ผ่านมาจะมีงานวิจัยและข้อเขียนเชิงวิชาการมากมายที่ยืนยันว่า ไก่ไทยไม่มีการใช้ฮอร์โมนมานานมากแล้ว แต่ก็ยังมีข้อสงสัยหรือแม้แต่การส่งต่อข้อมูลความเข้าใจที่คลาดเคลื่อน ทำให้พ่อแม่ยุคใหม่ยังมีความกังวลว่า กินไก่แล้วจะทำให้หน้าอกใหญ่หรือเด็กเป็นสาวเร็วก่อนวัยหรือไม่
เรื่องนี้ต้องถามผู้เชี่ยวชาญ นายสัตวแพทย์สรวิศ ธานีโต รองอธิบดีกรมปศุสัตว์ ในฐานะโฆษกกรมปศุสัตว์ ซึ่งท่านได้ตอบข้อสงสัยมาหลายครั้ง โดยเฉพาะคำถามเกี่ยวกับการใช้ฮอร์โมนในการเลี้ยงไก่ ทุกครั้งยังคงยืนยันว่าไม่มีแน่นอน เพราะสำนักงานคณะกรรมการอาหารและยา กระทรวงสาธารณสุข ได้ออกประกาศห้ามใช้ยาเฮ็กโซเอสตรอล (Hexoestrol) ซึ่งเป็นยาที่ใช้สำหรับตอนสัตว์ปีกและเป็นฮอร์โมนสำหรับรักษาสัตว์ โดยมีคำสั่งเพิกถอนออกจากทะเบียนตำรับยาที่ไม่ให้มีการจำหน่ายในประเทศไทยมาตั้งแต่เดือนมิถุนายน 2529 หรือเมื่อ 30 ปี มาแล้ว
ที่สำคัญกระทรวงเกษตรและสหกรณ์เองซึ่งมีหน้าที่โดยตรงในการกำกับดูแลให้การเกษตรมีมาตรฐาน ก็มีนโยบายดูแลเรื่องนี้อย่างเข้มงวดมาโดยตลอด โดยให้เจ้าหน้าที่กรมปศุสัตว์ รวมถึงสัตวแพทย์ผู้ควบคุมฟาร์มเป็นผู้ตรวจสอบและกำกับการใช้ยาอย่างเคร่งครัด ข้อนี้ผู้บริโภคจึงสบายใจได้ว่าไก่เนื้อที่เลี้ยงในระบบฟาร์มมาตรฐานนั้นไม่มีการใช้ฮอร์โมนนี้อย่างแน่นอน
อย่างไรก็ตาม อาจมีคำถามว่า ถึงห้ามใช้ก็อาจมีการลักลอบใช้ ข้อนี้ฟันธงเลยว่าไม่มี เพราะการใช้ฮอร์โมนนั้นต้องทำเป็นรายตัวด้วยการฝังไปที่ตัวไก่ ซึ่งถ้าจะทำก็ต้องใช้แรงงานคนจำนวนมาก นอกจากจะไม่คุ้มค่ากับการลงทุนแล้ว ยังเสี่ยงคุกเพราะการลักลอบใช้เป็นเรื่องผิดกฎหมาย และปัจจุบันการเลี้ยงไก่เนื้อก็ไม่ต้องเลี้ยงนานเหมือนในอดีต เกษตรกรใช้เวลาเลี้ยงเพียง 35-45 วัน ก็ได้น้ำหนักที่ตลาดต้องการ ซึ่งหากมีการลักลอบใช้จริงก็เรียกว่าได้ไม่คุ้มเสีย เพราะตัวฮอร์โมนยังไม่ทันออกฤทธิ์ก็ต้องจับขายเสียแล้ว ดังนั้นจึงไม่มีความจำเป็นที่เกษตรกรต้องพึ่งพาฮอร์โมนเลย

There are many researches and academic writings endorsed that Thai chicken has not used hormone for a long time; nonetheless, someone is lingering doubt or even shares a message of misunderstandings. Modern parents these day are therefore concerned that consuming chicken causes the growth of breasts or precocious puberty.
According to Mr.Sorawit Thaneto, Deputy Director General of the Department of Livestock Development, as a spokesperson, he has been answering these questions several times, especially the questions about the use of hormones in the raising chicken. As always, he insists that Thailand’s poultry industry is free of hormone. The Food and Drug Administration, Ministry of Public Health, duly prohibited Hexoestrol, which is used for castrate and treatment hormone. By issuing a revocation order from the drug registrar, Hexoestrol has not been sold in Thailand since June 1986 or 30 years ago.
Particularly, the Ministry of Agriculture and Cooperatives itself has a direct duty to regulate agricultural standards. The Ministry has strictly enforced the policy on this matter by authorizing the staff of the Department of Livestock Development including farm veterinarians to seriously inspect and supervise the use of drugs. This is to ensure the consumers that the Broilers raise in the standard farming systems certainly do not use this kind of hormone.
However, even prohibited, there may be a question about the stealthy use. This is absolutely a matter of none because the use of hormones must be embedded into the chicken individually that involves a large number of labors. It is not only worthless to invest, but also jeopardizes prison because smuggling is illegal. And today it does not take long to raise the broiler as in the past. It takes only 35-45 days for farmers to feed the chickens to get the weight required by the markets. For that reason, it is worthless to use hormone because the hormone has not yet activated by the time the chickens have to be sold. So, there is no need for farmers to count upon the hormones.

จากการสัมมนาของสมาคมผู้เลี้ยงสุกรแห่งชาติภายในงาน VIV ASIA 2017 เมื่อวันที่ 15 มีนาคม 2560 ที่ผ่านมา คุณกิดดิวงศ์ สมบุญธรรม จากกลุ่ม JAPFA แห่งประเทศเวียดนาม เป็นวิทยากรท่านหนึ่งที่ได้ให้เกียรติร่วมให้ข้อมูลที่อัพเดทของอุตสาหกรรมสุกรในเวียดนาม ซึ่งเป็นประเทศหนึ่งที่มีพัฒนาการของอุตสาหกรรมสุกรในระดับเดียวกับอุตสาหกรรมสุกรของไทย

อุตสาหกรรมสุกรในประเทศเวียดนามเป็นที่จับตาค่อนข้างมาก ทั้งปริมาณการผลิตที่ติดอันดับ 1 ใน 10 ของโลก ตลอดจนมีจำนวนการบริโภคของประชากรต่อคนต่อปีที่สูงกว่าประเทศไทยกว่าเท่าตัว จึงไม่แปลกที่ผู้ส่งออกเนื้อสุกรระดับต้นๆ ของโลกต่างวิ่งเข้าหาและสามารถสร้างมูลค่าการส่งออกได้มาก ทั้งสหรัฐอเมริกา และแคนาดา

ข้อมูลในปี 2559 ประเทศเวียดนามมีประชากร 95 ล้านคน แต่มีพื้นที่ทั้งประเทศน้อยกว่าประเทศไทย โดยมีพื้นที่ 331,689 ตารางกิโลเมตร มีกรุงฮานอยเป็นเมืองหลวง และมีเมืองโฮจิมินห์ซิตี้เป็นศูนย์กลางธุรกิจ เป็นสังคมเมืองร้อยละ 30 และสังคมชนบทร้อยละ 70 ประชากรส่วนใหญ่อยู่ในวัยเด็กและวัยหนุ่มสาวในจำนวนและสัดส่วนที่สูง ทั้งนี้ กลุ่มอายุต่ำกว่า 25 ปี มีสัดส่วนร้อยละ 46 โดยกลุ่มอายุ 15-24 ปี มีสัดส่วนร้อยละ 20 ซึ่งพร้อมสำหรับการเป็นกำลังสำคัญของประเทศ
อัตราแลกเปลี่ยนเงินตราในปัจจุบัน 1 เหรียญสหรัฐ เทียบเท่าประมาณ 22,800 เวียดนามด่อง (VND) โดยเมื่อเทียบกับเงินบาทจะมีประมาณ 640 เวียดนามด่อง/1 บาท มีอัตราการเติบโตของ GDP อยู่ในระดับร้อยละ 6.5-7.0 ต่อปี ในขณะที่ประเทศไทยอยู่ในระดับร้อยละ 2.5-3.0 มาเป็นเวลาหลายปี และประเทศไทยมีสัดส่วนผู้สูงวัยสูงขึ้นตามลำดับ ซึ่งปัจจุบันเป็นร้อยละ 20 ของประชากรวัยทำงาน ซึ่งมีแนวโน้มที่จะขึ้นเป็นร้อยละ 25 ภายใน 10 ปีข้างหน้า ซึ่งเป็นสองจุดที่น่าห่วงสำหรับประเทศไทยถ้ายังมีโครงสร้างทางเศรษฐกิจที่ไม่เปลี่ยนแปลง

In the seminar hosted by the Swine Raisers Association of Thailand in VIV ASIA 2017 on March 15, 2017, Mr.Kiddiwong Sombuntham from JAPFA in Vietnam has kindly shed some lights on the latest trend in Vietnam’s swine market. Notably, Vietnam is a country where swine industry is developed to the similar level to Thailand.

Swine industry in Vietnam is very popular and the production capacity is among the top 10 countries in the world. Moreover, Vietnam’s pork consumption per person is twice the size bigger than Thailand’s. It is no surprise why global leading swine exporters are chasing after Vietnam as the products can make so much export value from prominent markets like the USA and Canada.

Getting to Know Vietnam
In 2016, it is recorded that Vietnam had 95 million population. The country may be slightly smaller compare to Thailand, stretching over 331,689 km2. The capital city of the country is Hanoi, but the real business capital is Ho Chi Minh City. Around 30% of the country is urbanised, while another 70% is still a rural area. The majority of the population are youth and young adults, with 46% of the population aged under 25 years old. Among this, 20% are aged between 15 to 24 years old. It is foreseeable that these young population are going to be the main driving force for the country.

Currently, foreign exchange rate of 1 US dollar (USD) is equivalent to 22,800 Vietnamese dong (VND), or 640 VND per 1 Thai baht (THB). The country’s average GDP growth is 6.5-7.0% per annum comparing to Thailand’s 2.5-3.0% per annum. Notably, the ratio of elderly population in Thailand increases gradually. So far, 20% of working population are in old age, and is likely to rise to 25% within 10 years. These are two main concerns for Thailand, especially if the country’s economic structure remains unchanged.

แม้ว่าในปี 2560 จะมีประเด็นทางการเมืองที่แสนจะสับสนอลหม่าน และมีเรื่องราวต่างๆ ที่เหนือการคาดเดาเกิดขึ้นในสหรัฐอเมริกาก็ตาม แต่ผู้บริโภคในเมืองลุงแซมก็ยังคงต้องกิน และถ้าหากเป็นไปได้พวกเขาก็ยังคงกิน…กิน…และกิน…ตราบเท่าที่เงินในกระเป๋าจะเอื้ออำนวย และนี่เป็นอีกหนึ่งสัญญาณที่ดีสำหรับอุตสาหกรรมเนื้อสัตว์ ทางองค์การอาหารและยา สหรัฐอเมริกา (USDA) ได้คาดการณ์ว่าการผลิตเนื้อวัวและเนื้อหมูในสหรัฐอเมริกาจะขยายตัวอย่างมั่นคงในช่วงปี 2559-2568 ด้านสภาเนื้อไก่แห่งชาติ (The National Chicken Council) ได้รายงานว่าในปี 2559 ผู้บริโภคสหรัฐอเมริการับประทานเนื้อไก่ประมาณ 92 ปอนด์ ซึ่งมากขึ้นกว่าแต่ก่อน และมีแนวโน้มที่จะบริโภคเพิ่มขึ้นในอนาคต

แล้วผลิตภัณฑ์เนื้อสัตว์ประเภทใดที่จะเป็นที่ต้องการในปี 2560 และปีต่อๆ ไป? จากผลงานวิจัยผู้บริโภคพบว่า ผลิตภัณฑ์เนื้อสัตว์ที่ได้มาจากสัตว์ที่เลี้ยงในทุ่งหญ้าเขียวขจี และเลี้ยงอย่างมีมนุษยธรรมนั้นคือคำตอบ เช่นเดียวกับงานวิจัยของ Innova Market Insights ซึ่งเป็นบริษัทด้านงานวิจัยตลาดและผู้บริโภค ที่ระบุว่า “Clean Supreme” เป็นเทรนด์ท็อปฮิตของผลิตภัณฑ์อาหารเลยทีเดียว
จากการที่เทรนด์ Clean Label มีความเป็นองค์รวมมากขึ้น ได้ส่งผลให้ระบบซัพพลายเชนทั้งระบบต้องการความโปร่งใสเช่นกัน ซัพพลายเชนที่โปร่งใสนี้รวมถึงการเป็นมิตรต่อสิ่งแวดล้อม ซึ่งมีการเติบโตถึงร้อยละ 72 ต่อปี ในช่วงปี 2554-2558 และประเด็นด้านสวัสดิภาพสัตว์ที่เติบโตร้อยละ 45 ต่อปีในช่วงเวลาเดียวกันอีกด้วย

ด้าน Packaged Facts ซึ่งเป็นบริษัทด้านการวิจัยตลาด ก็ได้เล็งเห็นไปในทิศทางเดียวกัน และกล่าวว่ากฎทองกฎใหม่ในอุตสาหกรรมอาหารของสหรัฐอเมริกา คือ “ผู้บริโภคที่ได้รับทราบข้อมูล คือ ผู้บริโภคที่ได้ถูกทำให้เกิดความพึงพอใจ”

New meat and poultry products deliver more snacking, flavor, convenience—and transparency

Regardless of what political turmoil takes place in the country in 2017 and beyond, Americans will continue to eat, and if at all possible, they will continue to eat as well as their budget allows. That appears to be a good sign for the meat industry. The USDA projects that production of beef and pork will expand steadily between 2016 and 2025. The National Chicken Council, meanwhile, reports that consumers are eating more chicken than ever—approximately 92 pounds in 2016, according to USDA estimates—and are planning to increase that consumption in the future.

Just what kind of meat will consumers be eating in 2017 and beyond? According to consumer research, more of it will be grass-fed and humanely raised. Recent research from Innova Market Insights lists “clean supreme” is its top food trend.

Says Innova, “The demand for total transparency now incorporates the entire supply chain, as a clean label positioning becomes more holistic. Trending clean supply chain claims include ‘environmentally friendly,’ which has shown a CAGR [compound annual growth rate] growth of +72% from 2011-2015 and ‘animal welfare,’ which has grown at +45% per year during this period.”

Packaged Facts agrees and says new golden rule in the US food industry is, “An informed consumer is a satisfied consumer.”

Mr.Nan-Dirk Mulder ผู้เชี่ยวชาญด้านโปรตีนจากเนื้อสัตว์และปศุสัตว์ ของธนาคาร Rabobank แห่งประเทศเนเธอร์แลนด์ ได้กล่าวถึงแนวโน้มการเติบโตของอุตสาหกรรมเนื้อสัตว์นับตั้งแต่ปัจจุบันจนกระทั่งถึงปี 2573 ภายในงานประชุม International Poultry Council (IPC) ณ กรุงโรม ประเทศอิตาลี เมื่อต้นเดือนเมษายน 2560 ที่ผ่านมา โดยคาดการณ์ว่าการผลิตเนื้อสัตว์โดยรวมน่าจะมีแนวโน้มเติบโตเพิ่มขึ้นร้อยละ 44 ภายใน 20 ปีข้างหน้า

ทั้งนี้ การผลิตเนื้อไก่จะขยายตัวมากที่สุด หรือเพิ่มขึ้นร้อยละ 60 จากระดับในปัจจุบัน ถัดมาคือการผลิตเนื้อสุกรที่อาจเติบโตเพิ่มขึ้นร้อยละ 43 ตามด้วยเนื้อแกะและเนื้อโคที่จะขยายตัวร้อยละ 35 และ 25 ตามลำดับ แนวโน้มดังกล่าวส่งผลให้ความต้องการใช้ธัญพืช และเมล็ดน้ำมัน (Oilseed) อาจเพิ่มขึ้นอีกราว 500 ล้านตัน

อัตราการเติบโตของการผลิตเนื้อสัตว์
หากพิจารณาอัตราการเติบโตของการผลิตเนื้อสัตว์ประเภทต่างๆ จะพบว่าการผลิตเนื้อไก่มีอัตราการเติบโตสูงที่สุด หรือร้อยละ 2.4 ต่อปี เทียบกับการผลิตเนื้อโค เนื้อสุกร และเนื้อแกะ ที่มีอัตราเติบโตเฉลี่ยร้อยละ 1.1, 1.8 และ 1.9 ต่อปี ตามลำดับ ทั้งนี้ เนื่องจากเนื้อไก่เป็นเนื้อสัตว์ที่ได้รับความนิยมอย่างแพร่หลาย อีกทั้งอุตสาหกรรมการผลิตเนื้อไก่ยังมีความยืดหยุ่นสูง และมีประสิทธิภาพในการเปลี่ยนจากปริมาณอาหารสัตว์ไปเป็นเนื้อสัตว์เพื่อการบริโภคของมนุษย์ (Feed conversion) ได้ดีกว่าสัตว์ประเภทอื่นๆ นอกจากนี้ การผลิตเนื้อไก่ยังมีความยั่งยืนสูงในแง่ปริมาณก๊าซคาร์บอนที่ปล่อยออกมา

Mr.Nan-Dirk Mulder, Meat Protein and Livestock Sector Specialist of Rabobank, the Netherlands, made projections of the meat industry’s growth trends from now to 2030 in the International Poultry Council (IPC) conference in Rome, Italy, at the beginning of April 2017 by stating that the overall meat production may increase by 44% within the next 20 years.

Chicken meat production is projected to take up the largest portion of growth, trending up by 60% from the current level. Next in the line is pork, which is hoped to enjoy a 43% growth, followed by lamb and beef with a rise of 35% and 25% respectively. Such trends will consequently contribute to upward demand for cereals and oilseeds of approximately 500 million tons.

Meat Production Growth Rate
When considering meat production growth rate, chicken meat enjoys the highest annual increase of 2.4% while beef, pork, and lamb rise by 1.1%, 1.8%, and 1.9% per year respectively. This stems from the fact that chicken is a highly popular meat of choice and the poultry industry itself entails better flexibility and feed conversion ratios than other types of meats. Additionally, chicken meat production is highly sustainable in terms of carbon dioxide emission.

Announced more than five years ago, the revolution to be initiated by Industry 4.0 has failed to materialise so far. Instead, it appears that the digital transformation is taking place in numerous small evolutionary steps. The direction being taken is already shown by a wide range of applications from the fields of product and processes monitoring, labelling technology, packaging, distribution, logic, servicing and maintenance, whereby the main players are software, sensors, data and networking.

Industry 4.0 Needs Innumerable IP Addresses
In future, machines and plant will not only supply independent information about the condition of all important processes and systems but also communicate with each other and intervene in production processes to correct and optimise them without any human input. This calls for innumerable interlinked high-performance sensors to monitor product, machine and process data. However, the previous internet protocol, IPv4, cannot supply the huge number of IP addresses required for this. Therefore, the most urgent task is the rapid conversion to the new internet standard, IPv6, which is capable of providing an almost infinite number of IP addresses for sensors, devices, machinery and plant. This changeover is currently taking place all around the globe.

Networked Sensors are the Key
Sensors with direct or wireless network connections, as well as data loggers, are increasingly being used for measuring the temperature, humidity, viscosity, electricity consumption, torque, pressure, material flow, weight, etc., whereby RFID (Radio Frequency Identification) technology stands out in this connection. RFID tags exchange information and signals wirelessly with the read/write devices of the various processing machines and the transport, refrigeration and storage systems. Integrated into everything from slaughtering hooks and transport cradles to containers, E2 meat crates or packaging, they can control machinery and plant, not to mention register all product and process conditions along the value chain. Available at all times, the process data provide for greater production transparency, control and efficiency and represent a reliable stock of information for manufacturers with regard to the traceability of products and batches.

Intelligent test substance verifies and ensures efficiency and accuracy of moisture analyzer, which affect directly to the production process and product quality.
This intelligent test substance is an innovation of the era for moisture measurement. It plays a key role in production and quality control process of every industry ranging from food, medicine, plastic, to name a few.

Moisture analyzer works by measuring moist content in sample substance using thermogravimetric measurement. The machine consists of two parts, heating and weighing devices. When only one of the two devices are malfunctioned or facing errors from the influence of external factors, for example; erratic room temperature or irregular room humidity, the analyzer may deliver invalid test result.
